- Coconut flour
- Baking powder
- Sea salt
- Butter
- Granulated sweetener
- Eggs
- Vanilla extract
- Powdered sweetener
- Heavy cream
- Food coloring

Keto Sugar Cookie Bars
Ingredients
- 4 cups Wholesome Yum Superfine Almond Flour
- 1/4 cup Wholesome Yum Coconut Flour
- 1 teaspoon gluten-free baking powder
- 1/2 teaspoon pink salt
- 3/4 cups butter softened
- 1 cup Besti Monk fruit and Allulose Sweetener
- 3 large eggs
- 1 teaspoon real vanilla extract
- 6 tablespoons butter softened
- 1 cup Besti Monk Fruit and Allulose Powdered Sweetener
- 3 to 5 tablespoons heavy cream
- 1/2 teaspoon real vanilla extract
- Food coloring as desired
Instructions
- Preheat oven to 325 degrees F.
- Spray an 8 x 8" pan with coconut oil (or butter it), and line the bottom with parchment paper.
- In a medium bowl, whisk together almond flour, coconut flour, baking powder, and salt.
- In a large bowl, beat butter and erythritol until creamy. Beat in the eggs and vanilla extract, and then add in almond flour mixture, beating until the dough comes together.
- Press dough firmly into prepared pan.
- Bake 30 minutes, until just golden brown around the edges and slightly more firm to the touch. Remove and let cool in pan.
- Beat together butter and powdered erythritol.
- Add cream, 1 tablespoon at a time, until desired consistency is achieved. Stir in vanilla and food coloring.
- Spread or pipe onto cooled bars.
