Keto Corned Beef and Hash
Ingredients
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 2 cups riced cauliflower
- 1 tablespoon organic onion powder
- 1 pound cooked corned beef diced
- 1/2 cup keto compliant mayonnaise
- 1 tablespoon hot sauce I used Sriracha sauce
- 1/2 teaspoon prepared horseradish
- 1/2 teaspoon organic onion powder
- 1/2 teaspoon Tamari
- 4 large eggs
- Fresh flat-leaf parsley chopped
Instructions
- In a large cast-iron skillet, heat olive oil over medium heat.
- To the pan, add the garlic. Sauté for a minute or two until garlic is fragrant and golden.
- Add riced cauliflower and onion powder and cook until it is cooked through and begins to turn golden brown.
- Add the corned beef to the skillet. Cook, stirring often until the corned beef edges begin to crisp.
- Using a large spoon, make 4 wells in the corned beef mixture. Make them deep enough that the bottom of the pan is exposed in the center of the hole.
- Crack an egg into each well. Reduce heat to medium-low and cover the skillet. Allow the eggs to cook until the whites are done and the yolk is still runny.
- Remove from the heat.
- Sprinkle the hash with fresh parsley and drizzle the Russian Dressing over the top of the before serving.
