Has spring sprung where you are yet? It is trying it’s darndest to here! We went from cold, gray, and drizzly everyday, to sunny and mild one day, cold and gray and drizzly the next. It is weather by Sybil right now, and the weatherman has no clue. On the days he says it will be sunny you can just about count on rain. But nevertheless, when the tease of spring shows up around here my mind goes to all things burger. Whether it is from the grill or my skillet, visions of meaty little patties snuggled between two toasty buns make me oh so very happy. It is a true obsession actually. I start wanting to throw everything on a burger, top it with a bun, and shove it in my face. Oh, I have it bad!!
There is a local restaurant that has a special burger menu, on top of their regular menu, and I have been doing my best to recreate as many of them as possible. Along the way I have invented a few of my own, like The Mr T, The Big Pig, and one of my faves, my Greek Burger. But I adore Asian flavors, and really can’t believe that it has taken me this long to work on a burger that utilizes them in burger form.
With the Asian flavors I was creating I knew that Alexia Spicy Sweet Potato Fries would be the perfect final ingredient to make my burgers a success. The lightly sweet taste of those potatoes mixed with the smoky spice of chipotle? I am surprised that any of the fries made it to the burgers! Fingers were grabbing as soon as they were out of the oven!
My whole family loves Alexia fries and onion rings. I love them because they use only high quality, all natural ingredients. My family loves them because they taste awesome and are done in no time at all. Got a craving for some onion rings? Toss some on a baking sheet, pop them in the oven, and you are noshing on delightfully crispy rings of goodness in no time flat. That is perfect for my gang because patience is not their strong suit when it comes to being hungry.
Now, what did the fam think about my venture into Asia with these salmon burgers? Well, they all told me that they pretty much knew they would like them because they all love my Southern Salmon Patties. Although I know that logic sounds a bit confusing right? Southern to Asian? But with salty, sweet, sour, and spicy, these salmon burgers are very Thai in inspiration so I guess they are southern after all. But most important is that whatever they are, we all agreed that they were awesome and I need to make them again…….SOON!! Meanwhile I am looking forward to coming up with more recipes for us to enjoy Alexia french fries and onions rings with!

Asian Style Salmon Burgers with Hoisen Mayo and Spicy Sweet Potato Fries

3 tablespoons light mayonnaise
1 tablespoon hoisin sauce
1 tablespoon lemon, juiced and zested
1 to 2 teaspoons Sriracha (depending on desired spice level)
tablespoon canola or vegetable oil, divided
2 cloves garlic, minced
1 Fresno chile, minced
1 rib celery, finely chopped
1 cup panko (Japanese breadcrumbs)
3 (6-ounce) cans boneless, skinless salmon
4 green onions, chopped
1/4 cup fresh cilantro leaves, chopped
1 tablespoon low-sodium soy sauce
1 tablespoon ginger paste (1 inch fresh grated ginger)
In a small bowl combine mayonnaise, hoisin, lemon juice and Sriracha. Cover and refrigerate.
Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the celery, pepper, and garlic. Cook until it softens, 3 to 5 minutes. Remove from heat and let cool.
In a large bowl, combine panko, salmon, green onions, cilantro, soy sauce, ginger, lemon zest, salmon and egg in a large bowl. Combine with your hands then add the cooled celery/chili mixture and combine. Cover the bowl with plastic wrap and let the mixture cool in the fridge.
Preheat the oven to 425 degrees F.
Place the sweet potato fries on a baking sheet and cook for 25 to 30 minutes, stirring halfway through. Remove from the oven and preheat the broiler.
Meanwhile, divide the salmon mixture into 4 equal parts and shape into a 1/2-inch thick patties.
Heat remaining vegetable oil a large cast-iron skillet over medium heat. Carefully add the patties to the hot oil, cooking for about 4 minutes on each side, or until golden brown on the outside. Remove to a plate.
Toast the buns under the broiler.
Place patty on a toasted bun. Top with hoisin mayo, pickled onions and cucumbers , cilantro leaves, and spicy sweet potato fries.
Yield: 4 burgers Prep Time: 00 hrs. 10 mins.

Me and my weight loss buddy made these and we both decided to put it on lettuce wraps..to save on carbs and calories… We both loved them.. and it fits into both of our diet plans with the exception of the mayo but a little mayo doesn't hurt…. My family loved them.. My daughter even said I should make them again.. And the quick pickle on the cucumbers and red onion was delicious on the burger as well.. Love your blog.. We are both trying to lose weight and eat healthier… we are substituting lettuce wraps for the buns to eliminate some carbs but otherwise following it to a tee with the Garlic Ginger ,pickles..
