Tender pork loin kissed with a honey mustard glaze and all wrapped up in smoky, salty bacon. It is like a birthday present for your taste buds, even if it isn’t your birthday!!
OK you all know that I try my darndest to lighten up dishes whenever I can. But I was watching Food Network, which can be very dangerous, and saw a dish that had a pork loin roast, stuffed with sausage, and wrapped in bacon. Now, even though that sounded absolutely delicious, I knew that the calorie/fat count was probably astronomical. But it got me thinking about how wonderful a pork loin roast would taste wrapped in bacon. Oh, who am I kidding? Anything is wonderful wrapped in bacon. I would probably eat an old shoe if it was wrapped in enough bacon!
So I asked myself, what can I add to this pork goodness?
Honey goes good with pork.
Yes, yes it does.
Mustard tastes good with pork.
Oh my, yes you are right, it sure does.
How about we throw a little bit of thyme at the mix?
OK, let go for it!
Oh and we will hit it with a little bit of vinegar right at the end for some tang.

Yes, my mind is a wacky place folks. Sometimes I’m amazed that I’m allowed in public unsupervised!
But back to bacon. It really is the perfect food (minus that little issue about fat). How many things would you eat breakfast, lunch, dinner, AND even in dessert? Aside from pizza and ice cream, bacon is my #1.
Then my next favorite things about this dish? Pork wrapped in pork. Uhh helllllooooooo yum!! Who needs turducken? Give me some pork, wrapped in pork, preferably with a side of pork please! So that means no cheating and using turkey bacon for this one folks! We will hit the treadmill and eat our quinoa tomorrow, I promise!! And really, you aren’t eating a ton of bacon. Once piece per nice thick slice of pork loin. So really, this is a healthy recipe, right? Just nod and work with me on this OK?
Now, all joking aside, how does this taste? Well, the fact that Kevin ate his first slice in lightning fast speed, went back for seconds, then packed more for work that night….ya, I think he liked it. Me? Well, I think I already made it clear how I feel about it.
I took leftovers to my kids, before Kevin could eat them all, and they both raved about it. In fact my son was teasing everyone at work (he works at a bar) about how awesome it was, and that he wasn’t going to share. Not nice! Hey, don’t look at me. I taught him to share, I have no idea what happened!
So, long story short, you need to make this porky goodness ASAP!! Your family will love it, and if there are leftovers, you have some kick ass sandwiches for lunch the next day!
1 (4- to 4 1/2-lb) boneless pork loin roast, trimmed
Fresh cracked black pepper
3 garlic cloves, finely chopped
2 tablespoons fresh thyme, finely chopped
3 tablespoons honey
1 tablespoon Dijon mustard
1 pound bacon
1 tablespoon cider vinegar
Preheat oven to 350 degrees F
Pat pork dry, salt and pepper it, and transfer to a roasting pan. Stir together garlic, thyme, and 1 tablespoon honey, and mustard in a small bowl and rub all over pork. Lay bacon slices crosswise over loin, overlapping slightly, and tuck ends of bacon underneath loin.
Roast pork for 45 minutes. Stir together 1 tablespoon honey and vinegar until combined. Brush vinegar mixture over bacon slices and continue to roast pork until thermometer registers 140 F, about 15 minutes more.
