Does today feel like a Monday to anyone else?

I don’t know if it because I haven’t been sleeping well or what, but I felt like Groundhogs Day this morning. I could swear I had already lived this morning.

If I am going to be reliving days, could I please choose a really good one to do again?

I have been having a hard time sleeping because Kevin’s work schedule is all over the place lately. You would think that when he was promoted to supervisor his schedule would be set with nothing to worry about right? I mean, he had a set schedule before. But noooooo now his schedule bounces around more than a ping pong ball in a washing machine!

This week he is closing almost every night, which means that he doesn’t get home until 12:30 AM, or later depending on the work that needs to get done.

That makes for a crappy nights sleep for me because

A) I have a hard time sleeping without him here so a lot of the time I don’t fall asleep until after he gets home.
B) If I do fall asleep before he gets home I usually wake up when he comes to bed, which is usually around 3 AM. Then I have a hard time going back to sleep.

So I am pretty much damned if I do and damned if I don’t. Both ways I am like the walking dead in the AM. I stumble to the coffee pot, grumble as I let the dogs out, and poke at the keyboard on my computer hoping that I can get my brain working enough to get work done.

Once the fog clears from my brain though I am on top of the food game.

In other words, I am H U N G R Y!

And sometimes breakfast around here is an odd combanation of food.

Today I had a big bowl of this quick and easy Caesar Salad Pasta with leftover grilled steak.

Hey, it is representing several of the food group right?

Being a food blogger for over 6 years now, the whole family has gotten used to eating roast for breakfast, breakfast casserole for dinner, and Thanksgiving dinner in July.

It keeps them on their toes 

This pasta dish came to be because Mini Me is not a big pasta salad lover (I know, I am still wondering if she was switched at birth), but loves Caesar salad.

Like loves it so much she would eat it just about every day if she could.

With it still being gorgeous outside, and a ton of our meals coming from the grill, pasta salads are a necessity in my mind. Soooo it just seemed natural, if I was going to please the picky one, that I combine one of her faves with one of mine.

And this was the result. A nomalicious pasta dish that I think just about everyone would want to eat.

You could, of course, add some grilled chicken or shrimp, which we have done, and make it a whole meal if you like. Or toss in more veggies to bump up the nutrition.

Anyway you want it, you just have to do it.

Trust me, this is a must make!!

Caesar Salad Pasta

  • 1 pound penne pasta, cooked al dente
  • 5 large Romaine lettuce leaves, rolled up and thinly sliced
  • 1 cup grape tomatoes, halved
  • 1/2 small red onion, diced
  • Caesar salad dressing
  • Fresh cracked black pepper
  • 1 1/2 cups croutons


  1. In a large salad bowl, combine all of the ingredients and toss well. * See Cook’s Notes

  1. If transporting the salad, or eating at a later time, don’t add the croutons until right before serving.

  6. I can totally understand sleep deprivation when you have a toddler! I just have dogs and they keep me awake sometimes! I am so glad you enjoyed the pasta! It is a great side dish for BBQ isn't it?
