Cheesy Shrimp Crostini

Many of you know that after everyone moved to their own places a little over a year ago (Our kids moved to one house and Kevin and I got our own place). I try to have some, if not all, of the them over for dinner once a week.
Sometimes we will have one, other times two or four. 
This time?
Oh we just had eight!!
Ya, it was a little crazy.

But it had been forever since we had everyone over so I was really excited about it, and wanted to plan an extra great meal.
I decided that I would make an appetizer so we could all nibble and visit while the main dish was cooking, but couldn’t decide what to make. Then I remembered a recipe that my friend emailed to me months ago. 
She found it on Natasha’s Kitchen and OhhhEmmmmGeeeee I am so glad she did! 
I am drooling.
They were that good!!
I changed a few things, but it is one of the easiest recipes you will ever make.
And trust me.
You must make this!!
With 8 people here, they went verrrrrrrrrry quickly, although someone (who shall remain nameless) hid two for later consumption.
And boy were they good *evil grin*
I will tell you that these will be making an encore appearance for a weekend brunch soon, and this time there will only be two of us.

Cheesy Shrimp Crostini  
adapted from Natasha’s Kitchen

1/2 pound uncooked shrimp, shells on

1 tablespoon Old Bay 
2 bay leaves
Kosher salt
Cracked black pepper
1 loaf Baguette bread, sliced on an angle into 1/2 inch
1/2 cup Mayonnaise
1/4 cup fresh dill, chopped
1/4 cup fresh chives, chopped
2 cloves garlic, minced
1 cup of cheddar jack cheese

Preheat oven to 350 degrees F.

Remove the shells from the shrimp and place them in a medium pot. Make sure the shrimp is cleaned and set aside. Add Old Bay, bay leaves, salt, and pepper to the pot with the shells. Fill with water and bring to a boil. Once the water is boiling carefully drop the shrimp into the pot. Cook until pink, approx 3 minutes. Drain and place shrimp in a bowl of cold water to stop the cooking process. Drain and dice the shrimp.

Place the shrimp in a medium bowl with the mayo, garlic, chives, dill, and cheese. Season with salt and pepper to taste. Spread a tablespoon of the shrimp mixture onto each bread slice. Pace them on a baking sheet and bake for 10 minutes.

Serve warm.

  3. can these be refrigerated and then baked?

  4. I would think you could refrigerate the shrimp mixture if you want to make it ahead of time. You might have to increase the bake time to make sure they are good and hot though.
