Sloppy Joe, Meatball Sub, and Chili, all got together and created this quick and easy dinner dish!
You know it is funny. It is back to school time and, even though I don’t have any kids at home, I am finding myself focusing more on quick and easy meals.Maybe it is because I have been trying to squeeze as much cooking and photography time in as I can before we start to lose the evening light (I love to take my photos outdoors for the best light). Maybe it is because Kevin gets up to get ready for work right around dinner time so I don’t want to spend all of that time in the kitchen when I could be spending time with him. Or maybe, I am just tired of cooking and want to sit down as quickly as possible. I think it is all of the above really. So kids or no kids, I am looking for some simple weeknight meals just as much as you parents out there.
I have been thinking about some of my favorite dishes, and how to change them up a bit. A few of those dishes are meatball sandwiches, sloppy joes, and chili. Soup has been another one on my mind but it is kind of hard to make a soup sandwich right? Kevin was all for my sloppy joes because he absolutely loves them.
He cracks me up sometimes. Since we have been together he has told me, on numerous occasions, that I have ruined the canned/jarred/processed foods that he used to eat for him. Hamburger Helper? Bleck!! Jarred spaghetti sauce? Ewww (that is his opinion, there are still a couple spaghetti sauces I have gone to in a pinch), and canned sloppy joe mix? Ohhhh heck no! I love that he loves my cooking more, but sometimes I think he just says those things because he knows that I know if it isn’t cooked on the grill……well he isn’t cooking it. OK, maybe that is not entirely true. He does make fried chicken and a mean breakfast hash. But when it came to the nights, in the past, that I needed him to cook he would usually stop at the store and grab some spaghetti sauce, a package of bulk Italian sausage, and a jar of spaghetti sauce. Oh and some garlic bead to go with it. Not a gourmet meal, but I could definitely deal with it once in awhile.
Now? Oh noooooo, there is no way I could get him to eat any of that. So what do I do? I try to make double or even triple batches of things. Soup, chili, spaghetti sauce, sloppy joe mix, you get the idea right? It really is no big deal, and makes my life so much easier on those off nights.
Anyway where was I? Oh yes, mashing up some favorite dishes, ya that’s it.
So this dish became the love child of sloppy joe, meatball sub, and chili. I mish mashed them all up and WALA Chili Cheese Hoagies.
This is very definitely one of those recipes that you can double to freeze some for later. All you do is allow the mixture to cool completely, spoon it into a zipper top freezer bag (making sure to label it with the name and date), lay it flat in your freezer until frozen. Then when you freeze more dishes (sloppy joe mix, spaghetti sauces, etc) you can stack them on top of each other for space saving storage.
Chili Cheese Hoagies

1 1/2 pound ground beef
1 large onion, chopped
2 red bell peppers, chopped
4 cloves garlic, minced
1 14.5-ounce can diced fire roasted tomatoes
2 tablespoons chili powder
Fresh cracked black pepper
4 hoagie rolls
1 1/2 cups shredded cheddar/jack cheese
Cook ground beef, onions, red bell peppers, and garlic in a large skillet over medium-high heat, until meat is browned and vegetables are soft.
Add the fire roasted tomatoes, with the liquid and the chili powder. Stir to combine. Bring to a boil, then reduce to a simmer. Cook, uncovered, until the sauce begin to thicken a bit, about 15 minutes.
Preheat broiler to high.
Scoop out some of the bread from the inside of the hoagie rolls, and sprinkle 1/4 cup of the shredded cheese inside.
Spoon 1/4th of the chili mixture into each hoagie roll and top with more shredded cheese
place hoagies on a baking sheet and broil in the oven until the cheese is melted
