How does this always happen? I am planning for the holidays, and am like “Ya, I see you over there holidays, I am totally ready for you”.

It is less than a week away, and now I am in scramble mode!
Mayday…mayday…..we need to make the menu, we need to clean the house, we need to go shopping, we need to prep”!!
Duuuuuude, I am sweatin’  just typing that all out!
Butttttt you al know what always makes me feel good right? 
Yup, something Mexi-ish, preferably quick and easy, that I can just cram into my face, and possibly squeeze in an episode of the Voice whilst I enjoy.
Enter Chipotle White Bean Dip…..

Paired with my newest obsession, Food Should Taste Good Harvest Pumpkin Tortilla Chips because, well because food should taste good and these taste ding dang good!

I love them for sooooo many reasons. A- Helloooooooo pumpkin!! And then B they are made of super cool real foods like corn, pumpkin, and seasonal spices like cinnamon and nutmeg. It is the holidays all rolled into a delicious little chip that packs a ton of flavor.

PLUS – the are all natural, 100% whole grain, gluten free, certified vegan, low sodium, certified kosher, with no cholesterol, msg, trans fat, or artificial yuckiness. #winning

Which makes them my new BFF! And perfect for my holiday get together that I am majorly stressing over…

Now, in my mind, spicy and sweet need to get married and live happily ever after in a little cottage in the woods. So, I knew immediately that I wanted to make something spicy to really accent the slightly sweet pumpkiny goodness of these chips. Last year I made Creamy Chipotle Pumpkin Soup and it made my little  (and tummy) very very happy. So I chose to revisit that tasty combo.
This dip is ridiculously easy, so it is perfect for holiday entertaining, and tastes so good you may want to hide it so you can eat it all yourself! But you have to pair it with these Harvest Pumpkin Chips so you can achieve the level of culinary bliss that I did!

Chipotle White Bean Dip

Chipotle White Bean Dip


  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 2 tablespoons chopped chipotle in adobo sauce
  • 2 cloves garlic, chopped
  • 1 teaspoon cumin
  • 1 lime, juiced
  • Kosher salt
  • Fresh cracked black pepper
  • Handful of fresh cilantro, reserve a few leaves for garnish
  • 2 tablespoons olive oil


  1. Combine all of the ingredients in a food processor and process until smooth.
  2. Place the dip in a bowl and top with a few chopped cilantro leaves.
  3. Serve with Food Should Taste Good’s Harvest Pumpkin Tortilla Chips.

Prep Time: 00 hrs. 10 mins.

Cook time: 00 hrs. 00 mins.
Total time: 10 mins.
