Chocolate and Cookie Butter Marble Brownies

Well boys and girls, summer is officially over here in Western Washington. It has been in the low 60’s and rainy all week. *sigh* It is such a trade off for me. I love the weekends being nice because that is when Kevin is off work. He works nights so we seriously see each other only in passing. He is going to bed when I am getting up and sleeps while I am up. We get a couple hours together at night and then he is back out the door to work as I am winding down for bed. So on the weekends we have really been enjoying grilling, smoking, and hanging out by the fire pit that he built for my birthday party. 

He has worked on it more since then, but you get the gist of it with this photo. We have a huge backyard so we have decided that, now that we have a fire pit, the next thing is a horse shoe pit, then corn hole, and finally a giant Jenga table! 
Pretty cool huh? It is so much fun to play. We just need to find one of those giant wooden spools they use for cable and we are good to go. Then we will have the best party/BBQ backyard in town!
So to cheer myself up from the lack of sun, and party time, I decided that I needed some chocolate. Chocolate always makes everything better right? OK well maybe it doesn’t make it better but it sure doesn’t hurt! My friend emailed me a recipe a while back but, being the non-baker that I am, I set it aside for a rainy day. WELL, I have been baking more and feeling good about it, plus it has been a rainy week so I figured now is the time. 
I decided I wanted to incorporate my newest love, cookie butter, into this mood lifting treat. My Mom used to make chocolate and cream cheese marbled brownies so, why not chocolate cookie butter brownies? Heck ya!!
These brownies came out so light, moist, and very cake-like. Not too sweet, which is what I was worried about when I added the cookie butter. If you only like super fudgy, gooey, extra chocolatey brownies, these might not be the brownies for you. I like them both ways and, with these being lower in sugar, I was able to eat a whole brownie without it upsetting my tummy. But that is all I got……1 brownie!! I took 3 to the kids yesterday, and had my one with my coffee. When I got up this morning……all gone! Well, I guess Kevin liked them.

Chocolate and Cookie Butter Marble Brownies


  • 1/4 cup butter, melted (plus more for the pan)
  • 3/4 cup sugar
  • 1/3 cup water
  • 3 eggs, beaten
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup cookie butter
  • 3 tablespoons milk, divided
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup semi-sweet chocolate chips


  1. Preheat oven to 350 degrees F.
  2. Butter a 9×9 baking pan, then line it with parchment paper, making sure to leave overlap on the edges to use as handles.
  3. In a medium bowl combine the butter, sugar, and water. Stir until the sugar dissolves.
  4. Stir in the eggs, oil, and vanilla. Then add 1 cup of the flour and the baking powder. Mix until just combined
  5. Transfer 1/2 cup of the batter to a small bowl. Add the cookie butter and 1 tablespoon milk, whisk until smooth.
  6. Add the remaining 1/4 cup flour, cocoa powder, and remaining 2 tablespoons milk to the original batter. Add the chocolate chips.
  7. Pour brownie batter into the prepared baking pan. Spoon the cookie butter batter on top of the brownies batter, then swirl with a butter knife.
  8. Bake for 20 to 25 minutes, or until a tooth pick inserted in the center comes out clean. Remove to a wire cooling rack.
  9. Once cool, remove the brownies from the pan using the parchment paper handles.

Prep Time: 0 hrs. 20 mins.

Cook time: 00 hrs. 25 mins.
Total time: 45 mins.
