    Is it Friday yet?? 

    This has been an uber stressful week!

    It started off with cell phone issues. I got an alert on my phone that said

    Your phone is corrupt and could be dangerous to use!

    What does that mean? Is it going to blow up in my hand?? Are Ninjas going to jump out of the shadows at me? Holy crap!

    I Googled what was going on and blah blah blah, long story short, my phone is a POS. There were several instances of this kind of thing happening with my brand of phone. Some people said you could do a factory reset.

    NOPE

    That didn't work. Warnings kept popping up and programs kept crashing.

    I took it into my carrier and was told "We can't do anything about it here". They said that I needed to take it to a shop the next town over and drop it off. Then they would send me a new phone.....sometime in the next few days.

    Next few days?

    Raise your hand if your cell phone is the ONLY phone you have.

    There is NO way I could be without a phone for a few days.

    Sooooo we are changing carriers. New phones should be here tomorrow, send the old phones in, and bing bang book problem solved.

    Although the constant crashing, programs disappearing, and screen lock ups may drive me completely batty before the new phones get here!

    Then I had two slow cooker recipes going at once for the blog. I was all proud of myself multitasking and all that good stuff.
     
    But the power company said "oh no you don't" and we lost electricity for 2 hours, in the middle of the cooking process.
     
    FAIL *sigh* Food tasted good but looked awful!!
     
    So those recipes are back on the To-Do List.

    Then the cable locked up on me, in the middle of the night, while I was home alone and Kevin was at work.
     
    I was right in the middle of a binge watching session.
     
    AARRGGGG!
     
    It took me about 20 minutes to get it all back and working properly.

    So, what do I do when everything is falling apart and I want to run screaming into the hills?
     
    Bake a cake.
    Isn't that what everybody does 
     
    I can tell you that one bite of this cake and all I could think about was wanting another bite! It is that good! It is so good I was tempted, for a hot second, to hide it from Kevin and keep it all to myself.
     
    Then I thought about how mean that would be, and how many calories that meant for my behind, and I decided that sharing is caring.
     
    But, if you decide to keep it all to yourself I will totally understand.

    Cinnamon Roll Poke Cake Recipe

    This cake brings everything to the table. It has all of the great flavors of a cinnamon roll and is so moist it melts in your mouth.
    prep time: 5 MINScook time: 25 MINStotal time: 30 mins

    INGREDIENTS:

    For the Cake
    • 1 16.25-ounce bag of white cake mix
    • 3 large eggs
    • 1/2 cup milk
    • 3/4 cup water
    • 1/4 cup butter melted
    For the Filling
    • 1/2 cup butter melted
    • 1/2 cup brown sugar, packed
    • 1/2 cup sweetened condensed milk
    • 1 tablespoon ground cinnamon
    • 1 teaspoon vanilla extract
    For the Frosting
    • 1 8-ounce package cream cheese , softened
    • 1/4 cup butter , softened
    • 2 cups powdered sugar
    • 3 to 4 tablespoons water or milk

    INSTRUCTIONS

    1. Preheat oven to 350 F. Grease a 9x13-inch baking dish; set aside.
    2. In a large bowl, combine cake mix, eggs, milk, water, and butter. With an electric hand mixer, beat on low just until combined, then turn speed up to medium, and mix 2 minutes.
    3. Pour batter into prepared baking dish.
    4. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
    5. While the cake is baking, stir together butter, brown sugar, condensed milk, cinnamon, and vanilla extract. Set aside.
    6. Using the handle of a wooden spoon, poke holes in the cake (I poked about 35 to 40). Allow cake to cool a bit.
    7. Pour filling mixture over warm cake, gently spreading with a spatula as necessary.
    8. Let cake cool completely.
    9. To make the frosting, beat together cream cheese and butter until combined.
    10. Add powdered sugar, vanilla, and 1 tablespoon milk or water. Beat together until well-combined. Add additional milk or water to achieve desired consistency.
    11. Spread frosting over room temperature cake.
    12. Enjoy immediately, or chill until it is time to eat.

      My hand is up. My cell phone is my only phone so not having it would be a big problem especially since I need it for work. Well at least when things were not working out you had an amazing cake for consolation

      I can't remember the last time I had a scrumptious poke cake like this one looks and sounds. And cinnamon roll at that. I could probably eat this 3 times a day.
      P.S. I'm raising my hand. My cell phone is the only phone I have.

      I hate when a phone freaks out. I was in Orlando once, def. hours from home and my phone did a hard drive update. It had never done one before and I needed the GPS (which didn't come back up until long after I got home). Thankfully I had OnStar at the time to get me home! The cake looks good!
