This recipe is one of my favorite fish recipes for several reasons.
- It uses salmon which is my fave fish (living in the Seattle area you gotta love it).
- it is a one-pot/pan meal.
- It is ready in less than 30 minutes.
- It is creamy and rich and decadent so I feel like I am cheating but I am not.
- It is Italian and I love Italian!
- It is not geared only to the keto lifestyle/diet. My carb-loving friends and family love it too!
You know when you are living the low carb lifestyle it can get kinda tricky cooking for people that aren't watching their carbs.
Many of those family and friends can get the "look" on their faces as soon as they hear you are making something that is low carb.
You know, the squinchy bitter face? Like they smelled something really bad? Yup, that's the one!
So many people that haven't tried good keto-friendly food can assume they won't like it. But I am here to tell you that is so far from the truth. Living with a carbivour I have learned to come up with recipes that are inviting for both sides of the carb world.
Honestly, there is no better compliment than someone that is not keto telling me they love my food and want the recipes!
Not that my keto peeps opinions don't matter! You guys are why I do what I do. But ya gotta admit, when you can get a non-keto person to say they prefer your keto recipes......

INGREDIENTS NEEDED TO MAKE CREAMY KETO TUSCAN SALMON

INGREDIENTS
- Salmon fillets
- Pink sea salt
- Fresh cracked black pepper
- Olive oil
- Garlic
- Onion
- Chicken bone broth (homemade or store-bought)
- Sun-dried tomato in oil
- Heavy cream
- Baby spinach
- Parmesan
- Fresh basil
HOW TO MAKE CREAMY KETO TUSCAN SALMON
STEP 1
Heat the oil in a large skillet over medium-high heat.
STEP 2
Season the salmon filets on both sides with salt and pepper, and sear in the hot pan, skin down first, for 5 minutes on each side, or until cooked to your liking.
STEP 3
Once salmon filets are cooked, remove them from the pan and set them aside.
STEP 4
In the same pan, add the garlic and saute until fragrant (about one minute). Add onion and cook until translucent (about 3 to 5 minutes).
STEP 5
Add the sun-dried tomatoes and cook for 1-2 minutes.
STEP 6
Add the chicken bone broth, and allow the sauce to reduce slightly (about 3 more minutes).
STEP 7
Reduce heat to low, add the heavy cream, and bring to a gentle simmer while stirring occasionally. Season the sauce with salt and pepper to your taste.
STEP 8
Add in the fresh baby spinach and allow to wilt into the sauce, then add in the parmesan cheese. Allow the cream sauce to simmer for another minute or so until the parmesan cheese melts.
STEP 9
Add the grilled salmon filets back into the pan, spoon the sauce over each filet, and top with the basil. Serve over cauliflower rice, mashed cauliflower, zucchini noodles, or spaghetti squash.

Can I use garlic powder and onion powder to reduce the carbs?
The difference between using fresh garlic and garlic powder (1 1/2 teaspoons) would only be about .57 fewer carbs for the entire recipe so not a big save there. If you would like to substitute onion powder (1 1/2 teaspoons) for the fresh onion you would save about 2.85 carbs for the entire recipe, or .71 per serving.
Is salmon a good protein for the keto diet?
Yes! Salmon and other fish are not only nearly carb-free but also rich in B vitamins, potassium, and selenium.
How do I store leftover Creamy Keto Tuscan Salmon?
Store leftover salmon in an airtight glass container in the fridge for up to 2 days. To reheat place the leftover salmon into an oven-safe dish and bake in a 275-degree F oven until warmed through.

I love fish, and living a low-carb lifestyle makes me love it even more because it is so low in carbs, yet full of beneficial nutrients and good fats.
Before going keto Italian food was one of my favorites. Yes, I was a pasta lover through and through but I love all of the flavors. Fresh veggies and citrus, herbs, wine, mmmm! But I of course thought I had to give that all up for my new lifestyle. I thought things like the sun-dried tomatoes in this recipe were strictly off-limits.
Now that I have been eating this way for a number of years, I have eased my kung fu grip on foods that can or can't be eaten. There are so many ways you can incorporate your favorite foods into a low-carb lifestyle if you balance it all out.
A case in point is this recipe. Yes, sun-dried tomatoes are higher in carbs than fresh tomatoes because the water is removed and the sugars concentrate but if you balance out your day the slightly higher carb count is no problem.

Ingredients
- 4 6-ounce salmon filets

- 1 tablespoon fresh basil chiffonade (optional)

This is such an easy recipe that takes wild salmon over the top. So creamy in texture with a great blend of flavors. I have made this twice, with salmon alone and 1/2 salmon 1/2 wild shrimp. Leftovers freeze well for later lunches or dinner. Thank you for sharing.
