Welcome to my new addiction! 
These crispy little rosemary potato bites are heaven!
The first night I made them Kevin went so crazy you would have thought the skies opened and the angels sang ????
I usually test recipes 3 times before I post them for y’all but, I think it is safe to say that we had this at least 7 times in the last 2 weeks. I decided I had better get on here and post the recipe so you can enjoy them as much as we do.
I know I have said that I am trying to eat healthier BUT what I discovered is that 8 ounces of roasted potatoes are only 213 calories, and 1 tablespoon of olive oil is 119. What I didn’t know, until writing this post is that 1 tablespoon of bacon fat is only 30 calories. 
Ya, it shocked the crap out of me too.
Then I came across this little nugget of info on Healthline;
“The fats in bacon are about 50% monounsaturated and a large part of those is oleic acid.
This is the same fatty acid that olive oil is praised for and generally considered “heart-healthy””

Now, am I going to use bacon fat in everything?
I am now armed with the info that bacon fat has fewer calories than olive oil (and butter) AND that it isn’t a horrible thing like I thought it was. With the side plus that it makes things taste delicious!!
To my vegetarian homies, we have tested this just as many times with olive oil and it is yUMMy!!

So, if Y’all aren’t into all of that oil vs fat stuff, let’s get back to the awesomeness that is these damn potatoes ?
Not only do we think they are, the G-baby love, Loves, LOVES them. But then again, what kid doesn’t love crispy potatoes? We made these with salmon and roasted asparagus and I thought she was going to eat the plate she cleaned it SO fast.
That makes me one happy Nana ??
Now, pardon me while I go make another batch of these little bites of heaven!!


Sheet Pan Crispy Rosemary Potato Bites


Yield: 6 to 8 servings

Crispy Rosemary Roasted Potatoes

Crispy little bites of heaven, these potatoes will quickly become a family favorite!
prep time: 10 MINScook time: 50 MINStotal time: 60 mins


  • 2 pounds baby Yukon gold potatoes, cut into quarters
  • 1/4 cup olive oil (or melted bacon fat if you like)
  • 3 Tablespoons finely chopped fresh rosemary
  • Kosher salt 
  • Fresh cracked black pepper
  • Fresh parsley, chopped (for garnish)


  1. Pre-heat the oven to 400 degrees F
  2. Place all of the ingredients into a large mixing bowl.
  3. Season generously with salt and pepper and toss well
  4. Spread the potatoes evenly on a sheet pan. 
  5. Bake the potatoes for 40 – 50 minutes, turning them over halfway through, until golden brown and crispy.
