Eggs and Greens Pizza for Eat Your Greens #SundaySupper

This weeks Sunday Supper theme is “Eat Your Greens”.
St Patrick’s Day is almost here, and it is fun to come up with with ways to add “green” to the day without it being in the form of green beer.
When I first began thinking about what to make I was taken back to a St Patrick’s Day not too long ago. My daughter decided that her St Paddy’s day prank would be on me.
Let me explain.

St Patrick’s Day has always been a huge deal in my family. 
When the kids were little we would set up leprechaun traps. After they went to bed I would put chocolate coins and rainbow glitter in the trap. When the kids woke up they would be so excited.
“Look Mommy the leprechauns were here!!”
I don’t know how, but somehow that all changed when they got older. All of a sudden it was about being mischievous like the leprechauns, and usually I was on the other end of that mischief!
Anyway, long story short, a few years ago I woke up to everything in my refrigerator dyed green.
This was my nice eggbeater omelet that day thanks to my loving daughter!!
Gotta love family!!
So my dear friends, don’t let the leprechauns sneak weird green things into your refrigerator.
Just make these pizzas! 
And have a wonderful St Patrick’s Day!!

Eggs and Greens Pizza  

4 eggs, room temperature
1/2 pound spicy Italian sausage
4 whole wheat pita rounds
1 cup roasted tomato and garlic pizza sauce (recipe here)
1 cup Italian blend shredded cheese
1/2 small red onion, thinly sliced
4 cups baby arugala
1 tablespoon olive oil
1/2 lemon, juiced
Kosher salt and cracked black pepper, a pinch of each
2 tablespoons grated Parmesan cheese

Preheat oven to 375 degrees F.

In a large skillet cook the sausage over medium-high heat. Keeping it in bite sized pieces.

Place the pita rounds in the oven on the oven rack, and bake for 4 minutes, turning them over halfway through. Place the toasted pita rounds on a baking sheet. Spoon 1/4 cup pizza sauce on each round. Then add the sausage, shredded cheese, and onions, making sure to leave a well in the center. Crack an egg into a small ramekin and then carefully pour the egg into the well. Repeat with all pita rounds. Bake for 12 minutes or until the egg whites have set but the yolk is still runny.

Place the arugala in a large bowl. Add the olive oil, lemon juice, salt, pepper, and Parmesan cheese. Toss with your hands. Top each pizza with a handful of the dressed arugala.
