French Toast Pigs in a Blanket

Ingredients
- 24 sausage links
- 10 large eggs
- 1 1/2 cups milk
- 1/2 cup sugar
- 2 teaspoons vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 24 slices of bread
- 8 tablespoons butter
- Powdered sugar
- Maple syrup
Instructions
- Preheat oven to 200 degrees F.
- In a large bowl, whisk the eggs, milk, sugar, vanilla, cinnamon, nutmeg, and salt. Pour into a 2 quart casserole dish.
- Brown the sausages in a non-stick skillet. Place them on a paper towel to drain.
- Trim the bread to into 2" by 4" squares, and flatten them with your hand.
- Roll one sausage in each piece of bread, making sure to press the edges closed.
- Place the sausage rolls into the casserole dish and turn to make sure each one is coated.
- Heat 2 tablespoon of the butter in a non-stick skillet over medium heat.
- Once the butter begins to foam place 6 of the sausage rolls in the skillet. Cook until golden brown, turning so each side is cooked.
- Remove to a paper towel lined baking sheet and place in the oven to keep warm.
- Continue until all sausage rolls are cooked.
- Sprinkle with powdered sugar and drizzle with maple syrup.
Yield: 6 servings of 4
Prep Time: 00 hrs. 15 mins.
Cook time: 00 hrs. 20 mins.
Total time: 35 mins.
