    Sunday Supper is showing you how you can feed your family delicious dishes for not a lot of money. How about a smoky, sweet sausage surrounded but an eggy pillow of bread, dusted with powdered sugar, and drizzled with maple syrup? French toast meets the family favorite dinner, for this great twist on Pigs in a Blanket! 
    This weeks theme for Sunday Supper is Budget Meals, and I really thought about what I wanted to share with you. There are so many things you can make without breaking your pocket book. But when I really sat down and thought about it, I was reminded of one of my kids' favorite meals. Breakfast for dinner. Whenever I made breakfast for dinner you would have sworn it was Christmas. They were more excited for breakfast at dinnertime than if I made it in the morning for them! 

    This dish is the perfect combo of something they loved for dinner, French toast and sausage, and one of my childhood favorites, pigs in a blanket, and wowzers is it a crowd pleaser? These little guys don't hang around for long, let me assure you. So if you are worried that you aren't making enough you probably aren't. Between Kevin and the kids, I was luck to get my mits on 3 of them! Which is probably a good thing because I would have eaten waaaaaaaaaaay more than I should have if I was given half a chance! 
    Pair these with some fresh fruit and you have a full meal that everyone will love.

    French Toast Pigs in a Blanket

    Ingredients

    • 24 sausage links
    • 10 large eggs
    • 1 1/2 cups milk
    • 1/2 cup sugar
    • 2 teaspoons vanilla
    • 1/2 teaspoon cinnamon
    • 1/4 teaspoon nutmeg
    • 1/4 teaspoon salt
    • 24 slices of bread
    • 8 tablespoons butter
    • Powdered sugar
    • Maple syrup

    Instructions

    1. Preheat oven to 200 degrees F.
    2. In a large bowl, whisk the eggs, milk, sugar, vanilla, cinnamon, nutmeg, and salt. Pour into a 2 quart casserole dish.
    3. Brown the sausages in a non-stick skillet. Place them on a paper towel to drain.
    4. Trim the bread to into 2" by 4" squares, and flatten them with your hand.
    5. Roll one sausage in each piece of bread, making sure to press the edges closed.
    6. Place the sausage rolls into the casserole dish and turn to make sure each one is coated.
    7. Heat 2 tablespoon of the butter in a non-stick skillet over medium heat.
    8. Once the butter begins to foam place 6 of the sausage rolls in the skillet. Cook until golden brown, turning so each side is cooked.
    9. Remove to a paper towel lined baking sheet and place in the oven to keep warm.
    10. Continue until all sausage rolls are cooked.
    11. Sprinkle with powdered sugar and drizzle with maple syrup.

    Yield: 6 servings of 4
    Prep Time: 00 hrs. 15 mins.

    Cook time: 00 hrs. 20 mins.
    Total time: 35 mins.
