Now I like to make them breakfast on Mother's Day, but I don't want to spend all of my time in the kitchen. I want to be laughing with my girls and snuggling the grandbabies!

- Keto bread
- Cream cheese
- Eggs
- Almond milk
- Heavy cream
- Keto maple syrup
- Vanilla
- Lemon zest
- Blueberries
HOW TO MAKE KETO BLUEBERRY FRENCH TOAST BAKE
Cream the cream cheese in a mixing bowl with an electric mixer. Add in the eggs and continue to mix until combined. Add the almond milk, heavy cream, maple syrup, vanilla, and lemon zest; continue to mix until thoroughly incorporated.
Pour the prepared cream cheese mixture evenly over the bread and sprinkle the blueberries over the top. Stir to combine well, making sure bread is pressed into the cream cheese mixture.
Cover the baking dish tightly with foil and refrigerate overnight. If making it the same day, let it stand at least 1 hour before baking.
Preheat the oven to 350F.
Remove the baking dish from the refrigerator (if soaked overnight) and let stand on the kitchen counter for 30 minutes.
Bake covered for 30 minutes then remove the foil and bake an additional 30 minutes, or until set and top is golden brown.
Remove from oven and sprinkle with more powdered sugar substitute. You can also garnish with more blueberries and toasted walnuts, and serve with a side of keto maple syrup.

Ingredients
- 1 loaf keto bread (about 16 slices), cut into cubes
- 8 ounces cream cheese softened
- 8 large eggs
- 1 cup almond milk
- 1/4 cup heavy cream
- 1/4 cup Wholesome Yum keto maple syrup
- 1 tablespoon vanilla
- 1 teaspoon lemon zest
- 2 cups fresh or frozen blueberries
