I have to admit that chicken tetrazzini was nowhere on my radar before I went low carb. It wasn't a dish my Mom made when I was growing up, although I am surprised because she was the canned soup Queen! It seemed like almost every recipe had a can of cream of something in it.
Nope, I had zero clue and then BAM I saw a recipe for the traditional tetrazzini.
I don't know if it was the pasta, or those old cream of canned soup memories flooding my brain, but it looked and sounded SO good!
I think I let myself pout over not being able to have it for a few days and then the light bulb went off in my head. I knew there had to be a way that I could make it but stick to my diet. I do so love a challenge so I dug in with both hands and started writing and testing recipes.
The first thing I had to do was make those cream soup recipes keto friendly. Which was actually pretty easy.
Then choose a pasta substitute.
I thought about zoodles, as I use in this Chicken Alfredo Zoodle Bake recipe, or maybe spaghetti squash noodles.
But once I tried Palmini noodles in my Keto Lasagna and had carb lovers telling me they were just as good as the real thing. Ya, I knew I had a winner!
I even enlisted the help of people in my neighborhood for this recipe. When I made a batch I would put the word out on our Facebook page and people came and picked up a serving to test it out for me.
This final version got the thumbs up from everyone that tried it, old and young, low carb or not!

It may seem like a lot of ingredients but you will be shocked how quickly and easily this Keto Chicken Tetrazzini comes together!
- Keto Cream of chicken soup
- Keto Cream of mushroom soup
- Sour cream
- Butter
- Chicken bone broth (homemade or storebought)
- Salt
- Pepper
- Garlic powder
- Onion powder
- Frozen peas (can omit for strict keto)
- Cooked chicken
- Palmini angel hair noodles
- Mozzarella cheese
- Cheddar cheese
- Parmesan cheese
- Fresh parsley

🔪Instructions
This is a basic breakdown of the steps involved in making Keto Chicken Tetrazzini. You will find the full directions in the recipe card at the bottom of the post.
In a large bowl whisk together both soups, sour cream, butter, chicken broth, salt, pepper, garlic powder, and onion powder until combined.
Stir in the peas, chicken, noodles, and 1 cup of mozzarella cheese; toss to combine until fully coated.
Pour the mixture into the prepared baking dish and sprinkle with the remaining mozzarella, cheddar, and Parmesan cheese.
Cover with foil and bake for 30 minutes, then remove foil and continue baking for another 15 minutes until the cheese is melted and the casserole is hot throughout.
📖Variations
- Italian - add 2 tablespoons of Italian Seasoning Blend with the others spices.
- Greek - add 2 tablespoons of Greek Seasoning Blend with the other spices
- Mexican - add 2 tablespoons of Mexican Seasoning Blend with the other spices and replace the mozzarella cheese with pepper jack (or just plain Monterey Jack) cheese.
🍽 Equipment
There is no special equipment needed to make this recipe. You will just need a couple of good-sized mixing bowls, measuring spoons and cups, and a 9 x 13 baking dish.
Storage
This Keto Chicken Tetrazzini will store well in an airtight container in the fridge for 3 or 4 days.
I have not tried freezing this dish.
FAQ about Keto Chicken Tetrazzini
Palmini noodles are made from hearts of palm. They are firmer than zoodles or spaghetti squash noodles and have a flavor that I would put somewhere between artichoke and asparagus, but 10 times better!
The carbs from the peas in this are really very low, but if you are on strict keto you could add mushrooms in place of the peas, just saute them in some butter before adding them to the mix.
I have not tried to make this with anything other than the Palmini noodles but I can say that you could use this low carb spaghetti as a swap in this recipe. Just be aware of the number of carbs will increase.
If you try using zucchini noodles I would wring them out in a clean kitchen towel really well to try to remove as much liquid from them as possible before adding them to the recipe.

Ingredients
- Keto Cream of chicken soup
- Keto Cream of mushroom soup
- 2 cups sour cream
- 1/2 cup butter melted
- 1/2 cup chicken bone broth (homemade or store-bought)
- 1 teaspoon pink salt
- 1/2 teaspoon cracked black pepper
- 1 teaspoon organic garlic powder
- 1 teaspoon organic onion powder
- 1/2 cup frozen peas (can omit for strict keto)
- 2 pounds cooked chicken chopped or shredded
- 2 cans Palmini angel hair noodles drained and rinsed
- 1 1/2 cups shredded mozzarella cheese divided
- 1/2 cup shredded cheddar cheese
- 2 tablespoons Parmesan cheese
- Fresh chopped flat-leaf parsley for garnish
Instructions
- Preheat oven to 350 degrees F. Coat a 9×13 baking dish with butter or olive oil cooking spray, set aside.
- In a large bowl whisk together both soups, sour cream, butter, chicken broth, salt, pepper, garlic powder, and onion powder until combined.
- Stir in the peas, chicken, noodles, and 1 cup of the mozzarella cheese; toss to combine until fully coated.
- Pour mixture into the prepared baking dish and sprinkle with the remaining mozzarella, cheddar, and Parmesan cheese.
- Cover with foil and bake for 30 minutes, then remove foil and continue baking for another 15 minutes until cheese is melted and casserole is hot throughout.
- Remove from oven and sprinkle with parsley. Let stand 5-10 minutes.
