We here in Northwest Washington woke up to day 4 of "Snowmaggedon" 2019 ?
I know everyone laughs when we talk about snow here. People in the midwest are like, "You are having a snow storm? Aawwww that's so cute!" but, ya gotta remember, we don't get big storms here so anything over a couple of inches is like OhhEmmGeeeeee!!
Case in point?
The trash company didn't pick up our trash and recycling last Monday because there was a dusting, I mean like maybe an inch in some places, or snow ?

Ya, this time it is a bit different.
They are saying this could be the worst storm we have had here in 20 years!!
YIKES!!
The dogs are loving it, the neighborhood kids are all out playing in it, me?
Umm, my clumsy ass is staying inside and watching this all from the sidelines. There is NO way I am taking a chance walking anywhere in this stuff!

So what is a girl to do when she is snowed in?
Well, make Mexican food of course!
I have been missing one of my fave breakfast dishes, breakfast tacos ?
So I hit the ol' interwebs and came away with a recipe I found on Keto Connect.
I am not sure where they found it. I just saw their video talking about trying several different keto tortilla recipes and feeling this was the best.
I love their blog, and their food, so I figured this was the best place to start and boy am I glad I did!
If you have ever made a crepe these tortillas cook up a lot like them.
The batter is uber thin so don't think something is wrong when you get it all mixed up. Just be patient and you will be in for a treat ?

Yield: 8 soft taco sized tortillas
Keto Flour Tortillas
Now you can indulge in your favorite Mexican food dishes with these Keto Flour Tortillas. Tacos, fajitas, enchiladas, and more are waiting for you!
prep time: 5 minscook time: 40 minstotal time: 45 mins
Ingredients:
- 1 cup egg whites
- 1/3 cup coconut flour
- 1/2 cup plus 2 tablespoons water
- 1/4 teaspoon baking powder
- 1/4 teaspoon pink salt
- 1/4 teaspoon garlic powder *See Notes
- 1/4 teaspoon onion powder *
- 1/4 teaspoon cumin *
Instructions
- In a medium bowl, whisk together all of the ingredients. The batter will be very thin.
- Heat a 10" non-stick skillet over medium heat. Spray with non-stick spray (I used olive oil).
- Pour 1/4 cup of the mixture into the center of the pan and swirl the pan until it is coated evenly.
- Cook until the edges begin to dry and pull up from the pan and the tortilla is beginning to get golden brown, approx 2 to 3 minutes.
- Carefully lift the edge of the tortilla with a rubber spatula. The center of the tortilla may still be a bit wet, so be patient. Wait until it will easily turn loose and then and turn the tortilla over to the other side. Cook another 2 to 3 minutes until golden brown.
- Remove to a plate or cutting board.
- If not eating immediately, or freezing, place a piece of waxed paper between each tortilla and place the tortillas in an airtight container or zip lock baggie. * See Notes
NOTES:
The spices are completely up to you and your taste!Be sure to check the brands of spices you use because many have "hidden carbs". I usually use the McCormick brand.I usually make a double batch and freeze the tortillas. They thaw out very quickly.

Can you use almond flour instead of coconut?

I have not made them with almond flour so I am not sure how they would be. I know the ratio between almond VS coconut flour in recipes is different so I am not sure how much you would use. Sorry I couldn't be more help.

My mix wasn’t as thin so it seemed to be like a spongy/egg type deal. I think I messed up some how somewhere! Love the idea!! Thank you!!

You can add more water to thin the mix out if you need to. I use the egg whites from a carton instead of separating eggs and I think possibly that makes my mix thinner.

My Carb Manager App keeps saying these are 2g net carbs each. My spices don’t have any hidden carbs so I can’t figure out what’s wrong.

I am not sure. You are right, spices are usually the culprit for hidden carbs.If you feel more comfortable going with your program I would count the carbs it says. I have a program that is connected to my recipe card program and it automatically fills the nutritional info out for me. I haven't had any issues in the past but I can't guarantee the info 100% since I am not hand calculating everything. I have found some issues when I was using info through MyFitnessPal in the past.

You can make flax eggs, 3 tbsp water and 1 tbsp ground flaxseeds or chia seeds. Mix and let sit 3 minutes or so until it's the consistency of an actual egg.

No, just the egg whites. I buy my egg white in a carton so I don't have leftover egg yolks.

Sorry if I missed it but do they need to be stored in the refrigerator? And how do I find your enchilada recipe you mentioned?

Hi, yes I store them in a zipper top plastic bag in the fridge with parchment or wax paper between each tortilla. They can also be frozen if you want to make a big batch. I added links to two low carb enchilada recipes for you too!

We did not like these tortillas. The texture was really grainy and did not look like the picture. Not sure what we did wrong as it is a very simple recipe.

I am so sorry to hear that. I think sometimes it depends on the grind of the flour? I am realizing that not all flours are the same. Also it does take some whisking to really get the flour to combine with the flour. I haven't had this issue. Again, I am so sorry that you didn't enjoy the recipe. I am working on another recipe that uses more flour and you press like a regular tortilla. It has more carbs but the texture might be more to your liking!

Can you use egg white powder?

I have never used powdered egg whites as they are part of the liquid that keeps the tortillas together. You would have to try to add water to make up for the egg whites and then I am not sure if they would hold together. I also have a tortilla recipe that is more like a corn tortilla and made with almond flour if you want to try that.
