    This keto chicken and dumplings recipe is the perfect dish when you’re craving comfort food without the carbs. Delicious chicken stew, with low carb almond and coconut flour dumplings, it is pure comfort in a bowl!

    Y'all! This Keto Herbed Chicken and Dumplings recipe is a game-changer!
     
    One of my signature recipes had always been my herbed chicken and dumplings. Everyone that had it loved it and it was on automatic request from the family. If I didn't make it at least once a month they would let me know they were not happy!
     
    Then I went keto and BOOM dumplings were a no-no.
     
    They were sad, I was sad, we just weren't a happy bunch by any means. But I figured that there was no way I could low carbify my recipe. I saw low carb "dumpling" recipes out there but none really tempted my tastebuds.
     
    Then I ran across a recipe by Healthy Little Peach. 
     
    It stopped me in my tracks, errr seat, well whatever, it caught my eye. They looked like real dumplings and I once again had hope!
     
    The real test was going to be feeding them to my non-keto bunch though.
     
    I mean those of us that are keto know that low carb recipes don't taste just like the originals at times but we are happy to make some allowances to stay in ketosis. 
     
    Non-keto peeps? Not so much. Their tastebuds demand what they demand and boy they can be annoying.
     
    But, I made this, served it to them, and sat back waiting to see what would happen.
     
    Color me shocked when they LOVED it.
     
    Chicken and dumplings are back on the menu!!
     
    Ingredients to make Keto Herbed Chicken and Dumplings on a wooden table.
     
     

    INGREDIENTS NEEDED TO MAKE KETO HERBED CHICKEN AND DUMPLINGS

    You will need:
     
    For the Soup
    • Chicken
    • Carrots
    • Celery
    • Butter
    • Poultry seasoning
    • Organic onion powder
    • Pink sea salt
    • Fresh cracked black pepper
    • Chicken bone broth (homemade or store-bought)
    • Heavy cream
    • Xanthan gum 
     
    For the Dumplings 
    • Wholesome Yum superfine blanched almond flour
    • Wholesome Yum organic coconut flour
    • Fresh flat-leaf parsley
    • Fresh thyme leaves
    • Gluten-free baking powder
    • Xanthan gum
    • Pink sea salt
    • Fresh cracked black pepper
    • Butter, melted
    • Heavy cream
    • Egg

    HOW TO MAKE KETO HERBED CHICKEN AND DUMPLINGS

     

    STEP 1

    In a large soup pot, melt the butter over medium heat. Add the carrots, celery, poultry seasoning, and onion powder to the pot and stir well. Cover the pot and continue to cook the veggies over medium heat for 10 minutes, stirring occasionally. 
    STEP 2
     
    Remove lid and add bone broth, heavy cream, and whisk in the xanthan gum, bring the soup to a boil and then reduce heat. Simmer the soup for 20 minutes. 
    STEP 3
     
    Meanwhile, in a large mixing bowl, add the almond flour, coconut flour, parsley, thyme, baking powder, xanthan gum and salt, and pepper. Mix together well. 
    STEP 4
     
    Add in the large egg, butter, and heavy cream. 
    STEP 5
     
    Mix until it becomes a rough dough-like mixture. Use your hands, or a small (1 tablespoon) cookie scooper, to form the dough into 16 firm dumplings. 
    STEP 6
     
    Drop the dumplings into the simmering soup (making sure the soup is on low heat) and allow to cook for only 5 to 7 minutes or they will dissolve. 
    STEP 7
     
    Garnish with fresh thyme and/or parsley and enjoy!

    FAQ ABOUT KETO HERBED CHICKEN AND DUMPLINGS

     
    Can I make this dairy-free? Sure! Just sub canned coconut milk for the heavy cream and use vegan butter. That will change the carb count a bit. Don't use coconut butter in the dumplings as it will harden when you mix it into the flours and be hard to work with.
     
    How do I store the leftovers? Store any leftovers in an airtight container in the refrigerator for up to 4 days. Be aware that the dumplings might not hold their shape. I have had them stay together but also had them fall apart.
     
    Can I freeze Keto Herbed Chicken and Dumplings? I freeze it all of the time. I use these microwave and dishwasher safe containers and these easily removable labels. Again, be aware that the dumplings might fall apart when you reheat this.

    Last thoughts about Keto Herbed Chicken and Dumplings

     
    This recipe really does make me so happy. I went 2 years without my beloved chicken and dumplings, so ya know your girl was doing the happy foodie dance all over the kitchen when she finally got this recipe down,
     
    With that being said, these dumplings are not the "bready" kind of dumplings you get from that boxed biscuit mix.
     
    If you have been keto for a while you know that it is the gluten in the four that gives them that bread texture, and you just can't get that from almond or coconut flour, no matter how much you wish you could.
     
    However, I am totally fine with that. I get the flavor I wanted and all the comfort food feels from this dish.
     
    Also, the Mr, whom I also love to refer to as "The Complainer" can be my harshest critic when it comes to low carb recipes. He will tell me just like it is, no bones about it. 
     
    He ate two HUGE bowls of this the first time I made it, plus was very happy to have leftovers just a week later (I froze them).
     
    So, in my book, that is a win/win any day of the week!!

    • 3 pounds chicken cooked and shredded (I use my Instant Pot, slow cooker, or grab a rotisserie chicken at the grocery store)
    • 2 large carrots diced

    • 3 tablespoons unsalted butter
    • 2 tablespoons poultry seasoning
    • 1 tablespoon organic onion powder
    • Pink sea salt
    • Fresh cracked black pepper
    • 8 cups of chicken bone broth homemade or store-bought
    • 1 cup heavy cream
    • 1/2 to 1 teaspoon xanthan gum depending on how thick you like your broth
    • 1 1/2 cups Wholesome Yum superfine blanched almond flour
    • 1/2 cup Wholesome Yum organic coconut flour
    • 1 tablespoon fresh flat-leaf parsley chopped
    • 1 tablespoon fresh thyme leaves
    • 1 teaspoon gluten-free baking powder
