It is true. If you don’t believe me just ask my family!
They are used to my crazy food-induced behavior. Most of the time they just shake their heads and walk away.
But, my darling foodies, these little beauties have far surpassed any of my previous leftover loves.
They have made me toss aside those mile high turkey sandwiches topped with stuffing and cranberries. These are now my new favorite vehicle for leftover turkey nomification!

Leftover Turkey Pockets
These creamy little pockets of heaven make leftover turkey my favorite meal ever!

2 cups chopped turkey
4 ounces cream cheese, softened
1/2 cup shredded mozzarella cheese
2 teaspoons dried parsley flakes, crushed
1/2 teaspoon poultry seasoning, plus a pinch for the gravy
Fresh cracked black pepper
1 (8-ounce) tube crescent rolls
1/2 cup Parmesan breadcrumbs
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 cup chicken stock
Preheat the oven to 375 degrees F.
In a large bowl, combine turkey, cream cheese, mozzarella cheese, parsley, poultry seasoning, salt, and pepper, to taste.
Pour the breadcrumbs into a shallow dish.
Remove rolls from the can and separating them into triangles.
Roll a heaping tablespoon of the turkey mixture into a ball with your hands. Place the ball onto the large end of the triangle and carefully roll it up, tucking the sides in as you roll.
Dredge in bread crumbs, pressing to coat. Place seam-side down onto the prepared baking sheet and bake until golden brown, about 10-12 minutes.
Meanwhile, to make the gravy, melt butter in a small saucepan over medium-high heat. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken stock and cook, whisking constantly, until slightly thickened, about 3-4 minutes; season with salt and pepper a pinch of poultry seasoning, to taste.
