There have even been a few hot dogs tossed in there for good measure for the non-keto peeps in the form of Reuben Dogs, and BLT Hot Dogs.
Oh and BTDubs, I figured out how to play Pandora through my TV with my TIVO box, so no more boom box for the BBQs!

Anywho, let’s get back to the food, shall we?
Well, one of my favorite BBQ/picnic sides is coleslaw. I have loved it since I was a kid, and don’t even get me started on the several year addiction I had to the Colonels version UGH!! I think I ate it by the gallon!
But, now that my palate is a teensy bit older *koff koff*, as is my rear end, I decided I wanted to cut out as much fat and calories from my fave. So I pulled out the ol’ thinking cap and sat down to think.
Does anyone else have the image of Pooh bear tapping his head saying, “Think think think”?
Yup, that is pretty much what it looks like when I try realllllly hard to focus.
OK, so part of it was a no-brainer for me. I sub low-carb, no sugar added mayo for regular mayo and erythritol for sugar.
Now, what to do to make a bit more zippity do dah.
KFC’s has a TON of sugar (hence the yummy numminess right) so if we take flavor out, we gotta put flavor in.
I don’t know about y’all, but two of my favorite meals to mow down some coleslaw with are fried chicken (low-carb fried chicken recipe coming soon) and pulled pork.
I got to thinking, what goes with both of those things?
If you have never had dill pickles on a fried chicken sandwich you have got to try it ASAP.
But finish reading this first ohkay?
So dill pickles it was.
The first thing we tried this on was my Big Pig Burgers (I ate mine minus the bun and made quite the mess).
OhhhEmmmGeee people! It was heaven!
And you know what?
Yup, you guessed it. Kevin, who has told me on numerous occasions that he is NOT a pickle fan (He always pulls them off his burgers), L O V E D it!
And of course, I wanted to eat the whole bowl! But, since the kids were here for dinner, I refrained from doing so.
I just made another batch the next day and proceeded to go to town

Low-Carb Dill Pickle Coleslaw

14-ounce bag shredded cabbage
1/4 cup no sugar added mayonnaise
1/2 small onion, grated
1/2 cup dill pickle relish
2 tablespoon erythritol
2 tablespoons white vinegar
1 teaspoon celery salt
Fresh cracked black pepper
How to cook Low-Carb Dill Pickle Coleslaw
In a large bowl, combine all of the ingredients and toss together until the cabbage is well coated.
