    Lunch with the Girls - A Quick and Easy Taco Bar

    A couple of months Diana ago contacted a few of to talk about how we all needed a little blogger weekend away. 
    My first thought? Thank the Lawwwwwd!!
    When you do what we do, it gets so easy to stay cooped up, behind the screen, typing away. You tend to just get wrapped up with work, and forget there is a 3D world, and people, out there just waiting to be enjoyed. 
    At least I know that is my MO. My kids come to visit me, I get to watch the G-baby every Friday, and Kevin usually does all of my shopping for me on his way home from work.

    So getting out, and away, for the weekend sounded like something that realllllllllllly needed to happen.
    Diana has friends that own a place called Mountain View Manor in Enumclaw WA, and they were willing to host us for the weekend. I had never been to a wedding manor, but I knew it was big, and beautiful, had a view of Mt Rainier. 
    I was excited to see it. But I was not prepared for how amazing it really was! I was ready to move in immediately!!

    Who wouldn't want to get married here??
    Then we started discussing the plans for the weekend. Of course food was at the top of that list. 
    Ummm helloooo food bloggers here 
    We all wanted something quick and simple, and realized that Mexican food was a shared love, so an easy taco bar lunch sounded like a great plan for Saturday afternoon. We were soooo happy when Old El Paso came on board to sponsor it! Old El Paso has been a part of my meal routine for just about as long as I can remember, and now that my kids are on their own, Old El Paso is part of their meal planning as well.
    We jumped right into all of their products to try to pick just a few, which was super tough! I have always used their taco shells, and beans, but had zero clue about the other fab options they had.
    They have Sauces, and spices, and all sorts of sides, complete meal kits, and, my new fave, taco boats! Hollaaaaaa these things have made my life so complete.
    Now, before you start whispering that I obviously need to get out and get a life, remember that this girl is addicted to all things Mexican, and tacos are waaaaaay high on that list. You are going to give me a nice soft flour tortilla that keeps it shape, and holds anything and everything I want to put in it? 
    Hells to the ya people! Sign me up!!
    I ended up going with the Restaurante Baja Fish Soft Taco Kit which, as a true connoisseur of fish tacos (hello, lived in So Cal for oooohhh most of my life), is fabulous. I lightly pan fried pieces of cod, rolled in the provided spices, and served it in the mini soft taco boats topped with a bit of shredded cabbage, the baja sauce, queso fresco, pico de gallo, and cilantro.
    Heaven people, I am telling you, they are heaven with so little effort you are literally done cooking and ready to eat, before you know it.
    BAM! That is yumminess right there in yo face!
    Diana made a delish barbacoa beef in the slow cooker that neeeeeds to happen at my house ASAP!
    We also decided that a bit of pampering was something we all could use, so appointments were made for hair, makeup, and....... wait for it........
    MASSAGES!! Aaahhhhhhhhh. Oh ya baby, that's what I am talkin' about!

    In the end it was a wonderful retreat weekend with 3 girls that I adore, even though I am old enough to be their Mom!
    Wait, did I say that out loud?
    No no, I am old enough to be their big sister.
    Ya, that's it 
    We ate, we drank, we laughed, and we learned....oh ya and we ate....ohhhh boy did we eat!! Thanks again to Old El Paso for filling our tummies with some yummy yummy food!!
