Even with 2 years of high school Spanish, and living in Southern California for oh, most of my life, I never really learned. I could introduce myself, ask your name, where you live, and ummmm where is the bathroom, but a true conversation? Nope, I was lost. So I have to admit that my greeting came from an online English to Spanish translator.
I will take all of the help I can get.
However, I am kind of embarrassed to tell you how I first made it.
That is how this recipe came to be. My desire to “tweek” one of those boxed meals. You know, the one that you just add the meat to and WALA there is the family’s dinner?
*hanging head in shame*
I thought I was being all “gourmet-ish because I used packaged taco seasoning, the cheeseburger macaroni boxed meal, canned refried beans, cheese, and tortillas and just layer them all up.

So, I got rid of the packaged taco seasoning to cut down on sodium. Of course, dropped the super processed box meal with the macaroni, ditched the refried beans for non-fat refried black beans, and used Certified Angus Beef ® brand ground beef to pack in as much flavor as possible.
If you want to bump it up even more you could add some corn, chopped bell pepper, olives, avocado, oh the sky is the limit! I have even been known to sneak some grated zucchini or spinach in. Ssshhhh don’t tell!
What does all of that do?
Well, it takes this dish from the carbtastic gut bomb that it was, to a delicious meal that I feel good about feeding the fam
