Mini Pumpkin Hand Pies

WOWZERS! For those of you that read errrr saw this post when it first published, you saw that there was zero, zip, nada written up. This tells you how crazy things have been in my life. I totally thought I had completely finish it up so I scheduled it to publish. Patting myself on the back because I was actually getting things done ahead of time instead of last minute as usual. Ppfffttttt way to go brainiac! Sheesh!! Like I have said, on multiple occasions, I need a keeper. Note keeper, bookkeeper , zoo keeper…..anything AAHHHHH!!

The reason that my life is basic insanity lately is:
1 – My son and his long time girlfriend (I already consider her my daughter in law) got engaged.
2 – I have been helping with the wedding plans.
3 – I have been trying to cook as many fall-ish, holiday-ish recipes as I can for you, all while trying      to get used to taking photos in my new “studio” instead of outside since it is now dark by 5 PM      (big foodie pout) and am struggling majorly with the process *sigh*
4 – I have been trying to get holiday plans in order because we have three sets of kids + significant        others to schedule holiday dinner with and of course it can’t be all at once. So three dinners it is      *sigh*
5 – My son and his now fiance just told me that I am going to be a grandmother (insert crazy woman jumping up and down while laughing and crying all at once…ya that was me…not a pretty sight folks)!!
You see this is my very first grand baby! I don’t know what to do with myself. I have already started buying baby clothes and planning for when we babysit. The baby won’t even be here until August or September of next year people!! I am a complete lunatic! I am constantly checking on the mommy-to-be. Are you sleeping OK, eating OK, do you need anything? I keep thinking about special foods I could make her that she really enjoys. My freezer is getting full of care packages for her. *Whew* I am tired just telling you all that. 
No wonder I am not sleeping. I can’t shut my brain off.  Well, unless it comes to making sure I finish a post before I publish it (hanging head) how embarrassing. I need to start making sure I have my pants on before I leave the dang house!!!

Mini Pumpkin Hand Pies


  • 3 cups all purpose flour
  • 1/2 teaspoon salt
  • 2 sticks cold unsalted butter, diced
  • 1/2 cup ice water
  • 1 egg, slightly beaten with a splash of water
  • Turbino sugar for sprinkling
  • 1 cup 100% pure pumpkin puree
  • 1/4 cup brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1 rounded tablespoon pumpkin pie spice
  • 1/2 cup powder sugar
  • 1 tablespoon milk
  • 1/2 teaspoon pumpkin pie spice


  1. In your food processor, pulse together flour and salt. Add the diced cold butter and pulse until mixture resembles coarse crumbs, small chunks of butter will still be visible. One tablespoon at a time, add ice water and pulse until mixture holds together. It should hold together when pinched but not feel sticky. Turn dough out onto a floured surface and knead dough slightly, do not overwork. Form 2 dough balls, wrap in plastic, and chill at least 1 hour.
  2. Preheat oven to 400F, with rack on middle position. Line baking sheets with parchment paper.
  3. Meanwhile, combine the pumpkin puree, brown sugar, granulated sugar, and pumpkin pie spice in a bowl and whisk together until well combined.
  4. Roll out one of the chilled dough balls on lightly floured surface. Use a 3 1/2 to 4 inch biscuit cutter to cut out circles. Re-roll dough as needed to get as many circles out of it as you can.
  5. Spoon a heaping tablespoon of the pumpkin filling in center of each circle. Moisten edges with water, fold dough over, and seal tightly. Use fork to crimp edges. Cut slits on top of each one, and brush with egg wash. Sprinkle with coarse sugar. Repeat with remaining dough ball and filling. Bake on parchment lined baking sheet for 25 minutes or until golden brown. Let cool on wire rack.
  6. Combine the powdered sugar, milk, and pumpkin pie spice in a small bowl and whisk together until smooth. Place in zipper top bag, cut tiny hole at one corner, and drizzle onto the hand pies.

Prep Time: 01 hrs. 30 mins.

Cook time: 00 hrs. 25 mins.
Total time: 1 hrs. 55 mins.
