Are you tired of running all day long only to stress out over making dinner? Well my friends, let me introduce you to your new best friend, One Pot Bacon Cheeseburger Pasta!
Lately I have been feeling like there is not enough time in the day to get everything done that I need to get done. I feel like I am spinning in circles and at times getting nothing done! I know I have mentioned in the past that I have ADD, but I haven’t really talked about how it effects me. I am sure several of you out there deal with the same thing. It is weird to be my age and say I have ADD. It just seems like a childhood/teenage thing doesn’t it? But boy howdy does it sure kick my butt!! When asked to explain how it feels inside my brain, I tell people just think of working on a computer with 20 tabs open! Ya, that is my head on most days…..FUN!!
I try so hard to get so many things done and it seems the harder I try, the less I get done. I look around at these people that seem to be able to keep so many balls in the air at one time, and find myself feeling oh so jealous. Me? Oh those balls would be rolling all over the place and I am pretty sure I would be tripping over them as they went! Oh how I have strived to be a successful multitasker *sigh*
But, during one of my days where I was checking email, monitoring Facebook and Twitter, working on a blog post, and scanning the interwebs looking for ideas, I happened to run across an article discussing my very issue. The very first paragraph said that “To work efficiently we have to single task. No multitasking”. Do what? You mean the very plan that I have been trying to hard to accomplish, and failing miserably at, is flawed? OK, I don’t feel so bad now. But, even though I have this info, there is still part of me that feels like I should be able to accomplish this. Then I read this;
“We see someone who can juggle emailing, doing phone calls and writing a blogpost on the side and think, “That is incredible! I want to be able to do that too!”
So very unknowingly, we put a lot of pressure onto ourselves to juggle more and more tasks. When really, it only seemingly makes us more productive. The daily output,only decreases.”
Really? So I shouldn’t be beating myself up? Come to think about it, I have noticed that I do my best blog work when I am only writing, and not bouncing back and forth between email, TweetDeck, and Facebook. On the days that I actually focus on staying away from social media, I feel more productive.
What does this all mean? Well, to me it means that I need to learn how to plan my day out, work on one thing at a time, stop worrying about what is happening anywhere but where I am currently working, and give myself some attaboys when I get things done one by one. I think it will be a hard habit to break though. I always worry that there is something I am missing, or should be doing. Anyone else go through this?
Anywho, you are probably thinking what in the heck does that all have to do with this recipe Bobbi? First of all, I understand that (but y’all know I tend to ramble), and second, I am learning to love one-pot quick and easy recipes. No chance for me to get side tracked, just 1, 2, 3, FOOD! Now, when you couple that with a big ol’ pot of cheesy, noodley goodness? Well I am all over it! I mean just look at that photo? I am sad that there are no leftovers for me to to nom on right this moment. Who cares if it is breakfast time!
This could have easily been made with ground chicken or turkey, and quinoa instead of pasta, but after a stressful day of trying to chase my own brain around. Some carby cheeseburger pasta was calling my name!! Don’t judge.
Heat olive oil in a large skillet, over medium-high heat and cook the bacon until it begins to crisp and the fat renders. Remove the bacon with a slotted spoon and reserve on a paper towel lined plate.
Add the onion, garlic, and ground beef to the skillet, breaking the ground beef up with a wooden spoon as it cooks. Cook until no pink remains. Drain any excess fat from the pot.
Add the fire roasted tomatoes, tomato paste, beef stock, ketchup, mustard, Worcestershire sauce, pasta, salt, and pepper. Bring mixture to a boil.
Turn heat back down, cover and let simmer for 15-20 minutes, or until pasta is tender, stirring occasionally to prevent the pasta from sticking.
Once pasta is cooked, remove from heat and stir in 1 cup of shredded cheddar cheese. Sprinkle additional cup of shredded cheese on top and re-cover pot with lid until cheese is melted.
Top with diced tomatoes and green onions.
