One Pot Cheeseburger Macaroni – An easy, one pot meal, this Cheeseburger Macaroni is done in less than 30 minutes and tastes way better than a box ever could!
Ooohhh here comes the rain I know, not a shocker for Western Washington, but it has actually been pretty mild lately. Chilly, but we have had a respite from the days, and daaays of rain we had been having. I was seriously beginning to think I should start building an Arc
But today I am sitting on my sofa, looking out the window at the clouds and watching the rain fall on my deck.
It really isn’t that bad though. Sometimes it is actually relaxing to watch the rain fall, but when it has been here for more days than you can remember? Ya, then it grates on the nerves a bit
What do I do when that happens?
Nothing chases those gray clouds away like cooking up a big ol’ pot of comforty kind of food. So that is what I did last night.
I was actually planning on posting a new recipe for a black bean and quinoa salad, that is bombtastic , but when I saw the weather I just knew I had to post this. Healthy is good, I have really been working on eating better, but there are just times when a girl needs her pasta …..STAT!
This does kind of a double duty for me when it comes to comfort. #1 is has pasta and cheese #winning but #2 it reminds me of back in the day. You know, the days I made the boxed version of this. It has been soooo long. I remember that the kids, and I, loved it waaaaaay too much . I actually remember actually craving it!
Side note – After I had my surgery, and Kevin was in charge of cooking, this box made an appearance one night. I wasn’t going to complain, who was I to say anything when he was being nice enough to make me something to eat. What was funny was Kevin was the one that complained! He took a couple of bites, looked at me, and said, “Wow, how did I ever eat this crap?” Haha soooo spoiled!
THIS, my dear friends, was my answer to that box o’ shizz that we called food for the majority of my kids’ childhood! The problem is, I don’t want to share it, with anybody.
Kevin was shocked at how much the sauce really does taste like a cheeseburger. I didn’t tell him what my secret weapon is though, because it is dill pickle relish, and he doesn’t like pickles on his burgers.
I hate to break it to him, but yes he does and so does Rocky.
We don’t usually give the dogs much “people” food, but we have been spoiling him a bit since we got him. Kevin shares his breakfast with him, lets him sleep in the bed with us, and has been taking him to the beach every day, unless it is raining.
We have had several days of no rain, so he had several days of romping on the beach like a silly puppy.
But with the raining pouring down today, it was a no go

One Pot Cheeseburger Macaroni
Toss that box in the trash! This Cheeseburger Macaroni is done in less than 30 minutes, and tastes 100 times better!
prep time: 10 MINScook time: 15 MINStotal time: 25 mins
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, minced
1 pound lean ground beef
1 (15-ounce) can of diced fire roasted tomatoes
3 tablespoons tomato paste
1 1/2 cups of chicken stock
1/4 cup ketchup
1 tablespoon yellow mustard
2 tablespoons dill pickle relish
2 tablespoons Worcestershire sauce
Fresh cracked black pepper
8 ounces of campanelle pasta (Or any other short cut pasta)
1 1/2 cups of shredded cheddar cheese
1 tomato, diced
2 green onions, chopped
Heat olive oil in a large skillet, add the onion, garlic, and ground beef to the skillet, breaking the ground beef up with a wooden spoon as it cooks. Cook until no pink remains.
Make a well in the center of the meat, and add the tomato paste, cook for 2 minutes, then add the fire roasted tomatoes, stock, ketchup, mustard, pickle relish, Worcestershire sauce, salt, pepper, and pasta. Bring mixture to a boil.
Reduce the heat, cover, and let simmer for 15, or until pasta is tender, stirring occasionally to prevent the pasta from sticking.
Once pasta is cooked, remove from heat and stir in 1 cup of shredded cheddar cheese. Sprinkle the remaining shredded cheese on top and re-cover pot with lid until cheese is melted.
Tried this out last night and it turned out great. Both my husband and I loved it. Recipe has been printed out and put in my recipe binder. It's a keeper. I love anything that's a one pot meal! Thank you!
