I know I was just whining talking about how fast this year is slipping by, but now I am ready to say it isn’t moving fast enough! Why?
We got snow. I know that doesn’t sound like a big deal, but we haven’t had any significant amount of snow in about 5 years.
We get the occasional dusting here and there. You know, just enough to make things look pretty. We got that at Christmas, and we were all excited about it.
Then February hit.
We went from no snow for 5 years, to about a foot of the stuff!
Then the temperature stayed in the 20’s/30’s for a week.
Remember this girl is originally from San Diego! I handle cold weather MUCH better than I did when I moved here in 2006, but it still doesn’t mean I like it!!
And I will whine about it.
One of the things I have been doing, since it is too cold to go outside without fear of losing an extremity to hypothermia, is binge watching a few shows. God bless Netflix for giving us something to do when we are sick, or unable to pry our butts off the sofa right?
OK so, have you seen the new Netflix original series called The Santa Clarita Diet?
OhhEmmGeeeee it is soooooo funny!
It is about a suburban Mom (Drew Barrymore) that becomes a zombie. It goes through all of the “issues” one would have if they had a zombie in the family.
Like I said, super funny.
I guess my zombie obsession has gotten pretty bad. So far I have watched:

Another thing I love, when it is cold outside is, cheesy pasta. I pretty much get to the point that I want to cram every single carb I can get my hands on into my body!!
Place the tomatoes, garlic, oregano, red pepper flakes, salt, chicken stock, and the pasta in a large oven-safe skillet, stirring to combine. Bring the mixture to a boil and reduce to a simmer, then cover the pan and continue to cook until the pasta is tender about 16-18 minutes. Stir the pasta frequently as it cooks so it doesn’t stick.
Once the pasta is tender, remove the cover and stir in 3/4 cup of the Parmesan cheese and the chicken. Adjust seasoning if necessary. If the mixture seems dry you can add more chicken stock as needed to loosen it up.
Sprinkle the top with the mozzarella cheese and the remaining Parmesan cheese. Transfer the pan to the oven and bake for 5-10 minutes, or until the cheese has melted and bubbles around the edges. Garnish with the basil then serve.
