I have been a bit under the weather for the last few weeks. My fault, I have anemia and haven’t kept up on my iron and B12 levels #shameonme
Something I will make sure to do from now one because I hit rock bottom and felt like a lifeless blob. The nurse said I seriously had two little red blood cells chasing each other around my body trying to multiply! Oops!!
But I have had two iron infusions, and 3 B12 shots, so I am beginning to feel human again.
SO, now that I have an appetite, what is the first thing I am craving? Why a big ol’ pot of something mac and cheesy of course! I mean look at all of that gooey cheese! I dare say that is enough to wake up anyone’s appetite!!
Mac and cheese has always been a big time comfort food for me. Going back to that good old blue box when I was a kid, to today’s version, that might take a bit more time, but it sooooo much better!
I used to make a separate pot of cheese sauce and boil the pasta on it’s own, then I asked myself why in the heck I was taking those extra steps? Why make more work, and more dishes, when you can throw it all in one pot and have it done in less than 30 minutes? That = less work for me, quicker food in my face, and less dishes for Kevin
I usually make this for my kiddos. This is actually the dish they request for their birthday dinner 9 times outa 10! Yup, no fancy schmancy meals for these kids, just a heaping bowl of good ol’ chili mac. Gotta love that right?
Plus, if you check out the nutritional info after the recipe, it is packed full of some good stuff like iron, fiber and potassium. Yes it is a bit high in calories, but who eats this every night? Everything in moderation right?
Of course I am right.
And if you really feel like splurging, use a couple tablespoons of bacon fat in place of the olive oil because everything’s better with bacon……..right?

One Pot Chili Mac
Chili meets up with mac and cheese in this delicious chili mac, that is so simple you will wonder why you have been making it any other way!
2 tablespoons olive oil
1 onion, diced
1 jalapeno, seeded and finely chopped (add 2 if you like things on the spicy side)
2 cloves garlic, minced
1 pound lean ground beef
3 tablespoons tomato paste
1 tablespoon red chile powder
1 tablespoon cumin
Fresh cracked black pepper
1 cup beer (I used Negra Modelo)
1 15-ounce can fire roasted diced tomatoes, drained
1 15-ounce can Great Northern beans, rinsed and drained
I served this at a friend's dinner the other evening and it was a huge hit. I also served gruyere and extra cheddar on the side which they seemed to love, especially with few drops of hot sauce for those who like it hot. Excellent recipe thank you!
