I don’t know about you, but things really haven’t slowed down much for me this month. I mean I expected a bit of a lull after the hoopla of the holidays, but nooooooo not happening! I am finding myself busy busy busy, and tired tired tired!! I know I only have Kevin to cook for, unless of course the children decide to descend upon us.

Which usually happens without a phone call, or better yet a call from down the street,

“Mom we are on our way”.

Oh, I have 15 minutes to prepare? Sweet, thanks!! *sigh* But even when it is just the two of us, sometimes coming up with dinner plans through the week can leave me drawing a blank with no energy to be “chefy”. I know, I know, how does a food blogger not have meals planned? Don’t ask. It seems to be an occupational hazard.

That is why I was so happy that this week Sunday Supper paired up with McCormick to try their new Skillet Sauces! They are pourable sauces that make dinnertime a breeze! There are seven different flavored sauces to choose from that require just a few ingredients and are done in as fast as 15 minutes! Hellooooo quick and easy! They are perfect for my kids too. With a grandbaby on the way, I want them to be eating real food not fast food and frozen pizzas. Plus I pointed out to them that, with the Skillet Sauces only costing around $2.00, they are super budget friendly.

Back in the day, when I was tired and uninspired and the family was hungry, I would reach for that good ol’ boxed dinner. You know, the one a ton ingredients that you can’t pronounce? I don’t even want to admit how many boxes of that stuff I went through in a month! But McCormick Skillet Sauces are made with all natural spices and herbs. It just seemed natural for me to give them a try when I have been using their spices for years. The sauces come in seven different flavors, so making a choice might be a little hard. But I can guarantee that there is no way you can go wrong with any of them.

You all know that I luvvvvvvvvvvv Mexican flavors, so the first one I had to try was the Taco with Chipotle and Garlic. I tossed in a few extra ingredients and took it to football potluck. It was a huge hit, I mean HUGE!! Everyone wanted the recipe. Yay!! I love it when that happens. Kevin’s favorite is the Sesame Chicken Stir Fry. They are so easy to prepare he even got into the kitchen and cooked for me. Color me a happy girl!

So spend your time with your family them instead of in the kitchen and give them a meal that you can be proud of.

One-Pot Chipotle Chicken Taco Pasta

Skillet meals are a perfect for a busy family and this One-Pot Chipotle Chicken Taco Pasta will be your families new BFF!


  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 8 ounces uncooked short cut pasta (I used campanelle)
  • 1 pouch McCormick Taco Skillet Sauce
  • 1 (15-ounce) can diced fire roasted tomatoes
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 1/2 cup chicken stock
  • Kosher salt
  • Fresh cracked black pepper
  • 6 hard taco or tostada shells, crumbled (can also use tortilla chips)
  • 1 1/2 cup shredded Mexican blend cheese
  • Chopped fresh tomato
  • Chopped green onion

Equipment Used


  1. Heat the olive oil in a large skillet over medium high heat. Add the ground chicken and cook until no pink remains. Add the pasta, McCormick Skillet Sauce, crushed tomatoes, black beans, and chicken stock. Stir to combine. Bring to a boil, then reduce to simmer and cover until pasta is cooked through, about 15 to 20 minutes. Taste and add salt and pepper as needed.
  2. Stir in the taco shells and 1 cup of the cheese and gently toss to combine. Top with the remaining 1/2 cup of cheese, chopped tomato, and green onion.

Prep Time: 00 hrs. 10 mins.

Cook time: 00 hrs. 20 mins.
Total time: 30 mins.
