I have been wanting to make this sauce for EVER. I am serious, it has been a couple of years I think.
But, for whatever reason, I couldn’t seem to get my OOMF going to get into the kitchen and make it. Which is seriously really weird because I have been making the regular version (minus the pumpkin) for years.
So, let’s backtrack.
Fall is finally upon me and the spirit of the pumpkin possesses me
I start planning my pumpkin dishes, and finally put pen to paper to get this dang recipe out of my head and on to plate.
What is kind of embarrassing is that this is such a simple recipe. Why why why did I procrastinate on this? I think I really have an issue with this whole procrastination thing! My Mom used to tell me that my butt had inertia.
But you know what? To an extent she was right. Am I the only one that gets fabulous ideas or makes awesome plans, only to find it darn near impossible to find the gumption to follow them through?
What is worse is, just like this recipe, once I finally get it in gear you ask myself, “What was the big damn deal?”.
Please tell me that at least some of you have this same issue.

and with winter closing in it gets even worse. The dark drizzly days here in Western Washington make it hard to even get dressed some days.
In my defense I do work from home so, unless the UPS guy shows up, the only person that sees me is Kevin and he loves me so I am golden. I even asked him one day if he would like it if I did my hair and dressed nice every day (I guess I was trying to make points or something) and he said, and I quote, “Why would you want to get dressed every day if you aren’t going anywhere? It just makes more clothes to wash”. And that my dear friends is one of the reasons I love him so much, and also why I have such an extensive wardrobe of sweats and yoga pants!
Oh….yes….pumpkin….obsession….possession….recipes! Namely this Alfredo.
This sauce is seriously addictive! I made a bowl to use for the photos and then ate it for lunch. I figured I would eat a little bit of it and save the rest for later. Oh noooooooooooo!! I kept eating it, and eating it, and eating it. I had no idea I could eat that much pasta! I am surprised there was any left for Kevin to eat when he got home! I let him know that he had better eat it ASAP or it would be gone. I could have just taken the pot to the living room and ate it with a spoon while I watched Food Network.
A hint for the sauce – I left mine on low it thickened up a bit. If that happens, or you are reheating it, whisk in a bit of warm stock to get it back to the constancy you want.
*BONUS* if you decide you love this sauce as much as we did, make a double, triple, quadruple batch and freeze it in ziplock bags. Then when you want some for dinner you can pop it into some warm water to let it thaw and bada-bing-bada-boom pumpkiny goodness!!
Pumpkin Alfredo with Roasted Garlic and Mushrooms
The earthy flavor of pumpkin and mushrooms, mixed with the sweetness of roasted garlic, and the creaminess of Alfredo sauce, makes this pasta dish a must make for sure!
Heat 1 tablespoon olive oil in a large saute pan over medium-high heat. Add garlic and saute one minute, stirring occasionally, until fragrant. Sprinkle with flour, and stir to combine. Saute for an additional minute to cook the flour, stirring occasionally.
Slowly add chicken broth, whisking to combine until smooth. Whisk in milk and then the pumpkin puree. Bring the mixture to a simmer. Let cook for an additional minute until thickened, then stir in Parmesan cheese until melted. Reduce to low and cover.
Meanwhile, in a large skillet, heat remaining olive oil over medium heat. Add the sliced mushrooms and cook, stirring occasionally, for 5 to 10 minutes until they have given off their juice and begin to brown.
Salt to taste and remove from the heat.
Toss with cooked pasta or zoodles.
Serve topped with sauteed mushrooms and chopped parsley.
