Ranch Veggie Pizza

I fell in love with this appetizer at a Super Bowl game last year. I had a few of the other items on the table, and one piece of this pizza. I nibbled through the other items first, you know the typical dips and such that there are at these kinds of parties, but when I hit this pizza I perked up. Wow the veggies, the ranch flavor, the crust, it all went together so well and was like nothing I had ever had at a football party before. I didn’t feel like I was being swallowed in grease, or mayonnaise, or cheese. Not that those things are completely bad, but when you pile 6 of those kinds of things on a plate you start to feel a bit bloated and blah.

I went back for 3 pieces of the pizza and then tracked down the person that made it. She happily gave me the recipe and as soon as I saw it I knew I wanted to switch up the store bought ranch dressing for my Homemade Ranch Dressing the Healthy Way because it has less fat and added protein from the Greek yogurt I use.
Fast forward from Super Bowl till now. Yes, it took me 4 months to make this dang pizza!! Mostly because I didn’t want to make a whole pizza for just Kevin and I because, well I wasn’t sure if he would even eat it. BINGO!! He wouldn’t even try it. He even said, out loud, “It looks too healthy” Are you serious here? Oh well, more for me!
I have since found out that this is a pretty common appetizer, who knew, evidently not me. But I do like my version better because, well I like my ranch dressing. Does that make me bad?

Now doesn’t that look tasty??? I want a bite right now!

Ranch Veggie Pizza  

2 cans (8 oz. each) refrigerated crescent dinner rolls 1 pkg.

(8 oz.) low fat cream cheese, softened 
1/2 cup Ranch Dressing (I used my Homemade Healthy Ranch Dressing)
1 small head of broccoli, separated into small florets
1 carrot, chopped 
1/2 cucumber, chopped
4 green onions, chopped green and whites

Preheat oven to 375 degrees F.

Press dough onto bottom and up side of baking pan to form crust (mine was 16x12x1)

Bake 11 to 13 minutes or until golden brown; cool.

Mix cream cheese and ranch dressing until well blended. Spread over crust. Top with remaining ingredients. Refrigerate. Cut into squares.
