I love roasting just about any fruit or vegetable, so it seemed only natural to add one to a BBQ sauce recipe. I had no idea how wonderful it would turn out, and quickly become a family favorite!
This summer has been all about chillin’ and grillin’ with the family. Warm weather and sunshine just seems to bring everyone together, and what could be better than a BBQ to feed the crowd? So we have been giving our grill, and smoker, quite the work out. I have been going crazy working on all sorts of new sauces, but was super excited about this one. I mean, come on, roasted strawberries? Uhh hellooooo! Although, again my doubting Thomas was not too sure about what I had planned.
Hey, I don’t question him in his domain, the grill, so why should he be able to question me in my kitchen.
Soooooo, I then found out that this weeks Sunday Supper theme was “Summer BBQ Party”.
I love any excuse to call up the family, lay out a spread, and have a good time. Great food + great company = TONS of fun. Oh and some cold beer doesn’t hurt either!
Oh and all doubts were set aside when the ribs were served. My daughter told me that even though my Pumpkin BBQ Sauce was her favorite, this Roasted Strawberry BBQ Sauce was giving it a run for it’s money!
Sweet and tangy, this BBQ sauce is sure to be a crowd pleaser!
2 pounds strawberries, hulled and sliced in half
1 cup ketchup
1/2 cup brown sugar
1/4 cup balsamic vinegar
2 tablespoons maple syrup
2 tablespoons strawberry preserves
2 tablespoons Worcestershire sauce
2 teaspoons kosher salt
1 tablespoon dry mustard
1 tablespoon onion powder
1 tablespoon garlic powder
1/2 teaspoon cayenne pepper
Preheat oven to 400 degrees F.
Place the strawberries in a single layer on a baking pan lined with foil folded up on the sides to capture the juices and roast until they start to caramelize, about 15-20 minutes. Remove from the oven and allow to cool a bit.
In a medium pot combine the strawberries with the remaining ingredients. Bring to a boil, reduce to a simmer. Cook for 30 minutes, stirring frequently to prevent the sugars from burning.
Brush BBQ sauce on your grilled meat during the last 5 minutes of cooking.
Yield: Approx 4 cups Prep Time: 20 mins.

Ooohhhhh. Yuuuummmm. This sounds so good. We're having grilled chicken tonight and I'm trying to figure out a way to make this with the ingredients I have in the kitchen right now. I wonder how it would work to roast strawberries that were frozen and thawed? I don't have fresh ones and won't have a chance to go shopping. Hhhmmm. I keep meaning to make a strawberry BBQ sauce, I did a blueberry one a few years ago that was incredible. We are going to make one last attempt strawberry picking before the season is done this year and I think making a big batch of this is in order.
