Sloppy Joe and Biscuit Casserole

This Sloppy Joe and Biscuit Casserole recipe uses just a few simple ingredients, ground beef, fluffy biscuits, and a smoky sweet sloppy Joe sauce. It will be on the table in no time flat and have your family singing your praise.

This month Kevin and I have been binge-watching one of our favorite shows. 
He works nights, sleeps until early evening, and then it is hello my comfy spot on the sofa and my pay movie channel. And with 9 seasons to watch, well we have our job cut out for us. But it is fun to see who can remember what from which episode, or even discover that there is a rare episode that neither of us remembers watching.  


I actually was super happy to see that he was game to jump on the binge-watching bandwagon. 
He knows that, over the last couple of years, I have participated in this behavior while I was sick and glued to the sofa with my fave clear soda pop and a box of tissues.  
I made my way through every episode of my favorite law show, my favorite vampire show, and all of the best zombie show ever…..twice! 
He would just kind of smirk when I clicked from episode to episode, and totally rolled his eyes when I told him that my future plans to watch a complete season of a few popular shows that I missed out on the first time around. 
But I got him hooked with a few of my criminal detective shows, and have hopefully made an addict of him too! 
So you know that coming up with meals for us has kind of fallen to the back burner. 
I mean, who wants to take time out of their busy TV schedule to cook? 
Ya, we have it really bad folks. 
And since we have no delivery pizza available, and the fact that I really want us to eat healthily, I needed to come up with some quick and easy dishes for our menu that I could feel good about serving. 
After all of the holiday decadence, healthy is something that is an absolute must. 
OK, well maybe not a must for every meal, but let’s say we shoot for 5 out of 7 for the week?
For the last few weeks, I have been playing around with McCormick’s new skillet sauces. 
We have tried them all, and are hard-pressed to decide which one is our favorite. 
They have it all covered. Craving Mexican? They have Taco with Chipotle and Garlic or Fajita with Roasted Chili, Garlic, and Lime. 
Feeling more like Italian? No worries. They have Sicilian Chicken with Tomato, Basil, and Garlic. 
Craving Chinese? How about some Sesame Garlic Stir Fry? 
What I can tell you is that they are truly a godsend when you are down to crunch time, and out of inspiration, in the dinner making department! 
Plus they are all made with natural herbs and spices. No wacky chemical concoctions here folks, just food you can feel good about feeding your family. 
One of my all-time favorite childhood meals was good ol’ Sloppy Joes. 
Mom used to break that can out and I was a happy camper! 
I guess there is just something about being allowed to eat a meal that you made a mess with, and being praised for doing it, that can make a kid’s heart sing. 
So the fact that I could make that memory inducing meal easily with ingredients I feel good about was a win/win in my book. 
But, on this night, I was feeling a bit “fancy”. 
I wanted to do something besides just pulling out a couple of hamburger buns. 
So out came a few extra ingredients, and in just a little over 30 minutes I had a dish that had Kevin fooled into believing I had spent a lot more time and effort. 
As he dipped his biscuits into the tangy Sloppy Joe mix, and yummmed and mmmmmmed, I smiled knowing my secret was safe.

Sloppy Joe and Biscuit Casserole

This Sloppy Joe and Biscuit Casserole recipe uses just a few simple ingredients, ground beef, fluffy biscuits, and a smoky sweet sloppy Joe sauce. It will be on the table in no time flat and have your family singing your praise.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 pound lean ground beef
  • 1 cup frozen corn
  • 1 package McCormick Sloppy Joe Skillet Sauce
  • 1 can (7.5 oz each) refrigerated biscuit dough (10 small biscuits), cut in half crosswise


How to cook Sloppy Joe and Biscuit Casserole

  1. Preheat oven to 375 degrees F.
  2. Heat the oil in a large nonstick skillet over medium-high heat. Cook the onion and red bell pepper until the vegetables begin to soften, about 5 minutes. Add the garlic and ground beef, and cook until the beef is browned. Stir in the frozen corn and McCormick Skillet Sauce. Cover and cook 4 to 5 minutes or until mixture comes to a boil, stirring occasionally.
  3. Pour into 2-quart casserole dish. Place biscuits cut side down over hot mixture around edge of the baking dish, overlapping slightly.
  4. Bake 12 to 15 minutes or until biscuits are deep golden brown.
