Smoked Salmon Bites

This is a sponsored post written by me on behalf of Mondelēz International Group. All opinions are entirely my own.
This smoked salmon appetizer recipe is perfect for holiday entertaining or casual family get-togethers because they are easy to make and can be doubled, or tripled to fit your party needs.

Is this year spinning by fast for you? I mean like blink and a whole month is gone? It is crazy! I feel like it was January just yesterday.

Maybe that is because this year has seemed to have one big thing after another.
The new big thing is that we are moving, and not only moving but moving into a much smaller house!
Here is where my power to purge will be tested.
This could be an issue peeps.
I love my stuff.
I have purged pretty much everything I am willing to give up. I went through every room and really looked at things. If I hadn’t used it, or even looked at it, in the last year? Gone!
Then I got to the kitchen, and the wheels came to a screeching halt.
Purge my kitchen?
Have you lost your mind?
Kevin seems to think that it should be easy.
Just like he thinks following a recipe should be.
SO, every once in awhile, I like to hand him a recipe and tell him to go for it.
With the move, I really want to get things fixed up fast so I can have some family and friends over. That means cleaning, organizing, decorating, AND cooking.
Now, I know I am a food blogger, so cooking should be something that is a breeze for me. And I am the mom/wife that takes care of that stuff on my own.
But I decided to pass the torch to someone else.
Kevin? Tag, you’re it!
I told him that I wanted him to come up with the menu for the party.
Deer in the headlights stare.
I told him not to worry and pointed him toward the appetizer section of the blog. After a few minutes of reading, he chose a few recipes.
Now came the fun part, I told him I wanted him to change it up a bit. You know, put his own twist on things.
Crickets chirping.
So, I took him to the pantry and told him to look through things that we use on a regular basis because that would help him come up with ideas.
He immediately gravitated to the box of RITZ Crackers, which made me smile. It brought back memories of my childhood. My grandmother, and mother, making appetizers for holiday parties. RITZ Crackers were always used with a least one of the dishes, and that was usually the first one I went to.
RITZ Crackers were also my favorite snack after school. Peanut butter and jelly, pepperoni and cheese, and even pimento cheese (yes I was a strange child and loved pimento cheese) found their way atop a buttery RITZ Cracker, and into my ever so grateful tummy.
So, we have RITZ Crackers

Again, I passed the torch to Kevin. I told him to head to our local Fred Myer because I count on them to always have whatever I need for a recipe, and by the time he got there I would have the shopping list together for him.

He looked at me with a huge question mark on his face, so I explained that I had loaded a new program on his phone that allows me to create a shopping list on my phone and send it to his. So, no more having to sit on the phone with him, telling him each thing he needed to buy, as he shopped after work, and complained.
List done, sent to him, BOOM!

Once he got home I put him right to work.

He was so proud of himself and I have to admit I was pretty proud of him too. He subbed a couple ingredients because he thought it would taste better. Look at him gettin’ all “chefy” on me!

Plus, look how pretty they came out. Who knew he could make dainty food?

These Smoked Salmon Bites are not only pretty, they are absolutely delicious, and will be staying in our rotation of nibbles for family game and movie nights.

I might make them a few times just “because”.

Now I am curious. What is your favorite way to top a RITZ Cracker? Do you have a family recipe that everyone looks forward to? Or the perfect after-school snack? Leave me a comment and tell me what it is. I love to see how everyone else is enjoying their RITZ Crackers.
