Spaghetti with Browned Butter and Mizithra Cheese

Have you ever been to the Old Spaghetti Factory? Oh my gosh! If you haven’t you are missing out! I have loved this place since I was in high school. We used to go there for birthdays every year and it was just one of my go to restaurants. If there was any question of where to go eat, I always opted for the OSF. My favorite dish there was their Spaghetti with Browned Butter and Mizithra Cheese Ala Homer. I couldn’t get enough of it. I craved it all of the time. 
Then I moved and there wasn’t one close by. I think I actually went onto mourning for a little while, missing my favorite dish. Then I saw there was one in Seattle and drug Kevin to dinner. Now mind you it is about an hour drive in traffic to get there, and he is not a huge Italian food fan. So I am sure you can guess he was less than thrilled with the experience. If we are driving an hour to go to any restaurant it had better have a huge rib eye steak on the menu to make him happy *sigh* but I was still secretly ecstatic that I was able to indulge in my favorite OSF dish!!
OK Now fast forward a couple of years. I haven’t had my fix and have actually dreamed about it, yes I dream about food folks, so I finally decided I had to make it at home. For whatever reason I had it in my mind that it would be so difficult to make…..WRONG!!  I couldn’t believe how easy it was! The best thing was, not only did Kevin help me make it, he LOVED it. 

I have made this several times now. The cheese is a bit pricey but it freezes well and you can use it straight out of the freezer. Just grate some on the pasta and pop it right back in the freezer. We have had this as a stand alone dish and a side dish for steak. Either way, you have GOT to try it. Seriously, what are you waiting for? Go to the store and get that cheese!!!
First add 1 stick of sliced butter to a small sauce pot. If it is a light colored pot it helps the process but trust me, you will smell when it is done.
Heat the butter over medium heat until it melts. It will begin to foam a bit and that is good. That is your signal to start the work.
Now whisk whisk whisk and whisk some more. You want to keep that butter moving. This is where Kevin helped out. It will go from light, to lemony yellow, to brown. Once this happens, and you will smell that lovely nutty smell. You are done. Remove it from the heat and pour it into a cool container to stop the cooking process.
Some people strain their butter to remove and little bits but we like the flavor so I keep them in. Toss your cooked pasta an the browned butter, pile it on a plate, and shred a ton of cheese. Yummmm Heaven on a plate!! Salty, nutty, buttery, how could it be wrong? 
This recipe will serve two, but I will tell you I could probably eat it all myself!
Spaghetti with Browned Butter and Mizithra Cheese
serves 2
1 stick of unsalted butter, sliced
8 ounces spaghetti noodles
1/4 cup (or more) Mizithra cheese, shredded
Make your browned butter following the directions above. Set aside.
Cook your spaghetti as per package instructions. Drain and return it to the hot pot. 
Pour the butter over the hot pasta and toss to coat. Pile the pasta onto a plate (make sure to spoon any leftover butter on to the pasta) and top with the shredded cheese.

  3. I LOVE Old Spaghetti Factory mainly for THIS and for the meatballs. I cannot find Mizithra. What market did you find it in? I am in the Phoenix area.
