Thai Style Grilled Chicken Thighs

I know I usually do Flashback Friday today but my camera gave me some fits this week so I didn’t have the pictures I wanted to use. Plus this whole week has been dedicated to the CookingPlanit T-fal reviews and giveaway, so I only had one recipe this week and that was for my Garden Fresh Tomato and Bacon Frittata. Which brought me to the decision to ditch Flashback Friday for a week and just bring you one of my favorite recipes for chicken.

I always talk about how much I love Mexican food, but I adore Asian flavors just as much really. I guess to me Mexican food is more of a comfort food, whereas Asian food is just a flavor party in my mouth! The combination of sweet/salty/spicy just makes me a happy happy girl. 
I know I have mentioned that, with my move from CA to the Pacific Northwest, I have had a very difficult time finding good Mexican food here. Well not so with Asian cuisine. If I am willing to drive a bit (about 45 minutes to Seattle from here) there are plenty of restaurants for me to choose from. I am not a big fan of driving that far but I am planning on hitting a few of them in the near future!
I have played around with some Asian flavors for several of my dishes like my Vietnamese Style Steak, Spicy Sesame Peanut Noodles, and Slow Cooker Asian Style Ribs. But I look forward to experimenting with so much more!


Thai Style Grilled Chicken Thighs 

12 chicken thighs
1/3 cup chopped fresh basil
1/3 cup chopped fresh cilantro
1″ piece of ginger, grated
2 cloves garlic, minced or grated
1 serrano pepper, minced (can substitute a jalapeno if you don’t want it as spicy)
1 1/2 tablespoons soy sauce
1 1/2 tablespoons fish sauce
1 1/2 tablespoons olive oil
1 1/2 tablespoons brown sugar

Combine all ingredients except chicken in a large zipper bag and mix thoroughly. Add chicken and allow to marinate at least one hour, overnight if possible.

Grill chicken over medium-high heat for approx 5 to 7 minutes per side depending on the size of the chicken thighs.

Serves 4 to 6

    Your recipe calls for boneless and skinless thighs yet the photo appears to have both. Did you try using the boneless and skinless and did they come out okay? I'm wondering what would the cooking time be then. Thanks

  26. This looks delicious. I'm not a big fan of dark chicken meat so I will probably substitute breasts for the thighs. Do you think I will need to make any adjustments to make sure they don't turn out dry since thighs are typically fattier?

  32. If you use boneless skinless I would slice them in half if they are big breasts, so they are no more than an inch thick. Then I cook them about 5 minutes per side.
