– 1 1/2 lbs cooked chicken – 1 1/2 cups Spinach artichoke dip – 1 1/2 cups heavy cream – 4 ounces mozzarella cheese – 8 ounces low carb pasta – Fresh Italian parsley for garnish
Cook Time: 35 Min
Ingredients
Boil the pasta. Fill a large pot with salt water and bring it to a boil. Cook the low-carb pasta per package instructions.
Make the sauce. Meanwhile in a nonstick skillet over medium heat, warm the spinach artichoke dip up until it begins to melt, about 3 or 4 minutes. Pour in the heavy cream and whisk until it is completely combined.
Remove the sauce from the heat and add the cooked pasta and chicken. Transfer the mixture to a 9x13 baking dish.
Bake for 20 minutes then remove from oven and top with the mozzarella cheese and place under the broiler so the cheese gets bubbly, about 5 minutes.
