Garlic Herb Mushrooms (Cowboy Butter)

These easy Garlic Herb Mushrooms are the perfect side dish to almost any main entree! These sautéed garlic herb mushrooms are sauteed in a garlic herb aka cowboy butter sauce and they are sure to be a hit!

Ingredients
  

  • 6 tablespoons butter room temperature
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 2 pounds mushrooms halved
  • 4 cloves garlic minced
  • pink salt
  • cracked black pepper
  • 2 tablespoons fresh flat-leaf parsley chopped
  • 1 tablespoon fresh chives chopped
  • 2 teaspoons fresh thyme leaves chopped
  • 1 lemon zested and juiced
  • 1/4 teaspoon crushed red pepper flakes

Instructions
 

  • In a small bowl, combine the butter, olive oil, Dijon mustard, cayenne, paprika
  • Place a large saute pan or skillet over medium heat. Add the butter mixture.Once the butter has melted add the mushrooms.
  • Allow the mushrooms to cook for 5 minutes, stirring to flip them over. Then add the garlic and salt and pepper to taste.Allow the mushrooms to cook for another 5 minutes.
  • Stir in the fresh parsley, chives, thyme leaves, lemon juice and zest, and crushed red pepper flakes.
  • Lower the heat to medium-low and simmer for approximately 10 more minutes, stirring on occasion.
  • Garnish with more chopped herbs if desired.
