Buffalo Chicken Chopped Salad

Trying to eat lighter doesn't mean you have to forgo your favorite foods. It just takes a little imagination. This low carb and keto Buffalo Chicken Chopped Salad recipe provides all of those Buffalo Chicken Wing flavors you crave minus extra carbs!

Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts
  • 1/4 cup hot wing sauce (recommend Franks Red Hot)
  • 1 5-ounce bag chopped romaine 
  • 2 large carrots grated
  • 3 stalks celery chopped
  • 4 ounces blue cheese crumbles
  • Ranch dressing

Instructions
 

  • If your chicken breasts are really thick, slice them in half to allow quicker cooking without drying them out (you can also buy 1 pound of chicken tenders). Season with salt and pepper.
  • Heat the olive oil in a large skillet over medium heat. Place the chicken breasts in the pan and cook until the meat is no longer pink, approx 8 to 12 minutes, turning over halfway through.
  • Remove from the heat and onto a plate. Cover with foil and allow to cool. Once the chicken is cool enough to touch, chop it into bite-sized pieces.
  • Place the chicken and wings sauce in a small bowl, and toss to combine. Set aside, or cover and place in the refrigerator if you aren't making the salad immediately.
  • Place the lettuce, carrots, and celery in a large bowl, along with the chicken. Toss to combine. Top with blue cheese crumbles and ranch dressing
