Ingredients

For the Smoked Salmon Pate

  • 1/4 cup sour cream
  • 4 ounces cream cheese softened
  • 1 tablespoon capers rinsed, drained, and chopped
  • 1/4 red onion finely diced
  • 1/2 lemon juiced
  • pink salt
  • 6 ounces thinly sliced smoked salmon
  • Fresh dill for garnish
  • cracked black pepper

For the Blini

Instructions

For the Smoked Salmon Pate

  • In a small bowl, combine the sour cream and cream cheese with a hand mixer. Stir in the capers, onion, dill, and lemon juice. Taste and add salt as needed.
  • Chop 2 ounces of the smoked salmon and fold into the cream cheese mixture.
  • Cover and place in the fridge.
  • Reserve the rest of the smoked salmon for serving.

For the Blinis

  • Separate the egg whites and yolks. Place the egg yolks, melted butter, and almond milk in a mixing bowl. Gently whisk until combined.
  • Fold in the almond flour, baking powder, and salt.
  • In a separate bowl, whisk the egg whites using a hand mixer until light and fluffy.
  • Carefully fold the egg whites into the batter just until combined. Don’t overbeat as this will cause the blinis to flatten.
  • Heat a skillet over medium-low heat using just enough olive oil to coat the bottom. Spoon a heaping teaspoon full of batter per blini into the pan and cook for about a minute or until golden. Flip and repeat on the other side.
  • Repeat until all the batter is used up (you should be able to make approx 16 blinis).
  • Place cooked blinis on a baking sheet lined with parchment paper.
  • Top each blini with a smear of the smoked salmon pate, a curl of the remaining smoked salmon, garnish with a bit of fresh cracked black pepper, and some fresh dill.
