Perfect Keto Gravy

  • In a medium skillet over medium heat, melt butter. Whisk in the pan drippings and broth until smooth. Bring to a boil, then add Worcestershire, garlic powder, onion powder, and season with a good amount of salt and pepper, tasting as you go. Reduce heat and let simmer 10 minutes.
  • In a small bowl, combine the xanthan gum and olive oil. Whisk into the drippings mixture.
  • Let simmer another 5 to 10 minutes until starting to thicken, whisking occasionally. Gravy will thicken more as it cools but you can add an additional 1/8 teaspoon xanthan gum if needed.
  • If gravy is too thick upon cooling reheat a bit and thin with more broth as necessary.
  • Serve warm.
