Keto Shepherd's Pie

Ingredients
  

For the Topping

  • 2 lbs turnips peeled and cut into 1” thick pieces (pick small to medium-sized turnips)
  • 2 cloves garlic
  • 4 ounces cream cheese
  • pink salt to taste
  • fresh cracked black pepper to taste
  • 1 large egg lightly beaten
  • 2 tbsp unsalted butter melted
  • 1/4 cup parmesan cheese fresh grated
  • 1 tbsp fresh chives or Italian parsley chopped

For the Pie Filling

  • 1 tbsp olive oil
  • 1 large carrot finely chopped
  • 2 ribs celery finely chopped
  • 1 cup mushrooms finely chopped (about 4 ounces)
  • 2 cloves garlic
  • 1 lb ground beef or ground lamb
  • 1 tsp pink salt divided, or added to taste
  • 1/2 tsp fresh cracked black pepper plus more to taste
  • 1 tbsp onion powder
  • 1 tbsp better than bouillon beef base
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce or liquid aminos
  • 1/2 cup dry red wine such as Pinot Noir, Merlot, Cabernet, Sauvignon
  • 1 cup beef bone broth or chicken
  • 1/2 to 1 tsp xanthan gum

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Place the turnips in a large pot of salted water along with the garlic and bring to a boil.
  • Boil for 15 to 20 minutes or until the turnips are fork-tender. Do not overcook.
  • Drain the turnips well and place them in the bowl of a food processor.
  • Meanwhile, heat oil in a large cast iron (or other oven-safe) skillet over medium heat. Once hot, add the carrots and celery and cook for 5-7 minutes, until tender.
  • Add the mushrooms and garlic and cook for an additional 2 to 3 minutes.
  • Turn the heat up to medium-high and push the vegetables to the edges of the skillet.
  • Add the beef and cook until no longer pink breaking it up with a meat chopper or wooden spoon, about 7 to 10 minutes.
  • Add the salt, pepper, onion powder, beef base, tomato paste, Worcestershire sauce (or liquid aminos), red wine, and the beef bone broth. Bring it to a boil making sure to scrape the bottom of the skillet with a wooden spoon to remove and browned bits.
  • Whisk in 1/2 teaspoon of the xanthan gum and reduce the heat to medium and simmer, stirring occasionally, until the sauce thickens to a gravy-like consistency, about 10 to 15 minutes (add the additional 1/2 teaspoon of xanthan gum if the sauce is not thick enough for you).
  • Remove from the heat.
  • To the bowl of the food processor with the turnips, add the cream cheese, salt, pepper, and egg, and process until smooth.
  • Spread the mashed turnip mixture over the meat mixture, smoothing with a spoon or rubber spatula.
  • Brush the top with the melted butter and then sprinkle with the Parmesan cheese.
  • Place the skillet into the oven on a baking sheet to catch any sauce that might bubble over.
  • Bake 25 to 30 minutes or until the filling is bubbling and the top is golden.
