Mini Keto Pancake Bites

These easy to make keto mini pancake bites are a delicious way to start your day. With less than 1 net carb per bite, they are a great way to start your low carb day. You can add berries, or sugar-free chocolate chips too. Plus, they freeze perfectly for a grab and go breakfast on the run!

  • Preheat the oven to 375 degrees F.
  • Grease a mini muffin pan well. This is really important to keep the mini pancakes from sticking. You can even double grease by spraying the muffin pan with coconut oil after buttering it just to be safe.
  • Place the cream cheese, eggs, vanilla, sweetener, and maple syrup in a blender and blend until smooth.
  • Add the almond flour, baking powder, and salt. Blend until smooth.
  • Pour the batter into the mini muffin pan. You should be able to get 24 mini muffins (a little over 1 tablespoon per muffin).
  • Add blueberries or chocolate chips if using (about 4 or 5 per muffin is a good amount), pressing them gently into the batter.
  • Bake for 15 to 20 minutes, or until the pancake bites begin to get golden brown and the centers are done.
  • Serve with powdered Besti Monkfruit and Allulose Sweetener and Wholesome Yum Keto Maple Syrup if wanted.
