    These easy-to-make Keto Mini Pancake Bites are a delicious way to start your day. With less than 1 net carb per bite, they are a gluten-free low-carb breakfast. You can add berries or sugar-free chocolate chips, too. Plus, they freeze perfectly for a grab-and-go breakfast on the run!

    I know when I first started on my keto journey I was all about eggs for breakfast. I love eggs just about any way you can make them so I was a happy camper.
     
    Then I hit an egg wall. 
     
    I got to the point where I just couldn't look at another egg for breakfast no matter how it was cooked.
     
    I was shocked but it was a reality.
     
    So I branched out in my breakfast repertoire and started making things like these cream cheese pancakes, or these pumpkin pie pancakes.
     
    I am not a big sweets for breakfast kind of girl but they were a nice change, plus keto recipes are never as sweet as the originals.
     
    After a while of eating them, and the Mr and grandkids deciding they were pretty dang good, I got the idea to make them as a small bite and make ahead/meal-prep kinda dealio.
     
    I mean, who doesn't like cutting down on the amount of work you have to put in for your AM meal? Or any meal for that matter!
     
    I actually did it more for Kevin because he is notorious for not eating anything in the morning and then he is starving my lunchtime.
     
    Now, with this recipe, I can give the kiddos little bite-sized and dippable pancakes PLUS freeze them for later.
     
    It is a twofer!!

    INGREDIENTS NEEDED TO MAKE MINI KETO PANCAKE BITES

    INGREDIENTS 

    • Cream cheese
    • Eggs
    • Real vanilla extract 
    • Besti Monk Fruit and Allulose Sweetener 
    • Wholesome Yum Keto Maple Pancake Syrup
    • Wholesome Yum Superfine Almond Flour
    • Gluten-free baking powder 
    • Pink sea salt
    • Blueberries (or other berries) or sugar-free chocolate chips

    HOW TO MAKE MINI KETO PANCAKE BITES

     
    STEP 1
     
    Preheat the oven to 375 degrees F.
     
    STEP 2
     
    Grease a mini muffin pan well. This is VERY important to keep the mini pancakes from sticking. You can even double-grease by spraying the muffin pan with coconut oil after buttering it.
     
    STEP 3
     
    Place the cream cheese, eggs, vanilla, sweetener, and maple syrup in a blender and blend until smooth.
    Add the almond flour, baking powder, and salt. Blend until smooth.
     
    STEP 4
     
    Pour the batter into the mini muffin pan. You should be able to get 24 mini muffins (a little over 1 tablespoon per muffin).
     
    STEP 5
     
    Add blueberries or chocolate chips if using (about 4 per muffin is a good amount), pressing gently into the batter.
     
    STEP 6
     
    Bake for 15 to 20 minutes, or until the pancake bites begin to get golden brown and the centers are done.
     
    STEP 7
     
    Serve with powdered Besti Monkfruit and Allulose Sweetener and Wholesome Yum Keto Maple Syrup if wanted.

    FAQS ABOUT MINI KETO PANCAKE BITES

     
    Can I make these with coconut flour? I have not tried to make them with coconut flour. Coconut flour is not a 1:1 sub for other flours so it would take some trial and error to get it right. A rule of converting recipes I start with is to use about 1/4th the amount of almond flour in coconut flour, but again I have not tried it yet so I can't say it will work.
     
    Can I use other berries instead of blueberries? Yes, berries are on the low carb list of fruits we can have. These are great with chopped strawberries!
     
    Can I freeze the Mini Keto Pancake Bites? Yes, I will go into more detail in the next section but, they are great frozen. Just allow them to cool completely, then place them on a baking sheet and freeze in a single layer. Once they are frozen place them in a zipper-top bag or freezer-safe container. I have keto them for up to 3  months in the freezer.

    Now on to the question about freezing.
     
    These Mini Keto Pancake Bites freeze beautifully! 
     
    Which was my goal actually when I started working on this recipe. I really wanted a grab and go kind of breakfast that the Mr and the kiddos would love, all while cutting down on the amount of AM work I would have to put into the kitchen.
     
    To freeze the pancake bites allow them to cool completely, then place them on a baking sheet and freeze in a single layer. Once they are frozen place them in a zipper top bag or freezer safe container. 
     
    To reheat I place the amount of pancake bites I want into a dampened paper towel and reheat in the microwave. The time really depends on your microwave wattage and how many you are reheating.
     
    You can then sprinkle with powdered sugar substitute and dip them in keto maple syrup!

    If you add berries or sugar-free chocolate chips please calculate those into your macros/carbs.

      Delish! I was getting burnt out on eggs too. I can only make them so many ways! These hit the spot! I made half plain & the other half w/sugar free mini chocolate chips - both turned out great. Unfortunately I didn't have any keto friendly maple syrup so I did leave it out. But they were still yummy but I bet that would give them a lil extra yumminess! Def butter & grease up your pan! I have a small mini muffin tin & I didn't do it good enough on my second batch. They stuck a little, nothing to bad. Def a keeper! Thanks
