Stuffed Buffalo Chicken Meatballs

These cheese-stuffed Buffalo Chicken Meatballs are one of our favorite football game day appetizers. These meatballs are low carb, keto-friendly, gluten-free, and so very delicious! They are sure to please.

Ingredients
  

  • 1 pound ground chicken
  • 1 large egg
  • 1 tablespoon organic onion powder
  • 1 teaspoon organic celery salt
  • 1 large carrot peeled and grated
  • 1 clove garlic minced
  • 1/2 cup ground spicy pork rinds
  • pink salt
  • cracked black pepper
  • 4 ounces cream cheese room temperature
  • 2 ounces cheddar cheese shredded
  • 2 slices bacon cooked and crumbled
  • 1/3 cup keto Buffalo wing sauce
  • blue cheese crumbles

Instructions
 

  • In a large bowl, mix the ground chicken, egg, onion, celery, carrot, garlic, breadcrumbs, salt, and pepper.
  • Mix in the cream cheese, cheddar cheese, and bacon.
  • Using a small 1-tablespoon cookie scooper, make 20 balls, flatten them, placing one teaspoon of the cheese mixture into the centers of the chicken patties, wrapping them around the filling, and placing them on a baking sheet.
  • Bake in a preheated 400F oven until cooked and lightly golden brown, about 20 minutes.
  • Toss the meatballs in the buffalo hot sauce and top with blue cheese crumbles.
