Keto Buttermilk Biscuits

  • Preheat the oven to 450 degrees.
  • Place a silicone baking mat or a piece of parchment paper on a baking sheet.
  • Stir the vinegar into the heavy whipping cream and set aside for 10 to 15 minutes.
  • Meanwhile, in a large bowl, whisk together the almond flour, coconut flour, salt, and baking powder.
  • Add the eggs, heavy whipping cream, and butter to the dry ingredients and whisk to combine.
  • Using a large cookie scoop (or ice cream scoop) spray the scoop with olive or coconut oil. Scoop the dough into 8 biscuits onto the baking sheet.
  • Cook for about 12 to 15 minutes or until the biscuits are golden brown and spring back a bit when touched.
  • Remove from the oven and allow to cool on the baking sheet.
  • These biscuits are fragile so I don't recommend trying to cut them in half. Just top them with butter and sugar-free jam, or gravy, etc.
