Make-Ahead Ham and Cheese Breakfast Casserole

This low carb Make-Ahead Ham and Cheese Breakfast Casserole is a go-to when we need a hearty hot breakfast. With layers of keto bread cubes, eggs, ham, and cheese, this casserole is a crowd-pleaser no matter how you eat!

Ingredients
  

  • 1 tbsp unsalted butter
  • 8 slices (4 cups loosly packed) day old keto bread cut into 1/2-inch cubes
  • 1 tbsp avocado or olive oil
  • 1 small onion thinly sliced
  • pink salt
  • 1/2 lb ham steak (or leftover ham) diced
  • 8 eggs
  • 1 cup heavy cream
  • 1 tsp mustard powder
  • cracked black pepper
  • 6 ounces Colby Jack cheese (1 1/2 cup) shredded

Instructions
 

  • Grease a 2 quart baking dish with butter, spread the bread cubes in the bottom of the dish.
  • Heat olive oil in a large skillet over medium heat. Add the onion and saute until it begins to caramelize - about 15 minutes.
  • In a large mixing bowl, whisk together the eggs, heavy cream, mustard powder, salt, and pepper.
  • Spread the ham over the bread cubes, then spread the onion on top.
  • Pour the egg mixture over the onion and top with the shredded cheese.
  • Cover and refrigerate for at least one hour, to overnight.
  • When you are ready to make the casserole, preheat the oven to 350°F and take the casserole out of the fridge while the oven is preheating. Bake, uncovered, for 35 to 50 minutes, or until the edges are bubbling and the top begins to brown. *See Notes

Notes

The baking time will depend on the dish you use. Check the middle with a knife and if it comes out clean the casserole is done.
Cover the casserole with foil if the top is getting too brown during the cooking time.
