Instructions

  • In a large mixing bowl, combine the ground beef, crushed pork rinds, egg, ketchup, mustard, red wine vinegar, liquid aminos, brown monk fruit sweetener, garlic powder, onion powder, salt, and pepper.
  • Mix well and shape the meat mixture into four oval patties.
  • Heat a large skillet over medium heat for about a minute, then add the olive oil. Place the meat patties in the skillet and cook them for about 3 to 4 minutes on each side, or until they’re well-browned. Remove the patties from the skillet, cover with foil, and set them aside.
  • Add the sliced mushrooms to the skillet and reduce the heat to medium-low. Cook the mushrooms, stirring occasionally, until they are soft and caramelized, 5 to 7 minutes.
  • Stir in the beef consomme and thyme and raise the heat back to medium. Whisk in the xanthan gum and continue to cook, whisking until the liquid begins to thicken, add the additional 1/2 teaspoon of xanthan gum if you want a thicker sauce.
  • Add the patties back to the skillet. Bring to a simmer, cover, and cook them for 10 to 15 minutes, or until they reach an internal temperature of 135 for medium-rare or 145 for medium.
  • Taste the gravy and adjust seasoning if needed.
  • Serve topped with gravy and garnish with chopped parsley.
