Roasted Jalapeno Hummus

Ingredients
  

  • 3 large jalapeños
  • 20 ounces frozen cauliflower florets about 1 medium head
  • 3 cloves garlic
  • 1/4 cup tahini
  • 2 limes zested and juiced
  • 1 tsp New Mexico chili powder
  • 1/2 tsp pink salt
  • 1/4 cup of chopped fresh cilantro leaves
  • 1/4 cup olive oil

Instructions
 

  • Bring your oven rack to the top of your oven, and heat your broiler to high.
  • Drizzle the jalapeños with a bit of olive oil and place them on a baking sheet under the broiler.
  • Broil, turning as needed, until the skin has bubbled and charred.
  • Remove the peppers and place them in a bowl.
  • Cover the bowl tight with cling wrap and allow the peppers to steam for 15 minutes, or until cool enough to handle.
  • Meanwhile, steam your cauliflower florets by placing them in a steamer basket over a large pot of simmering water for about 10-15 minutes or until tender.
  • Peel the skin off the roasted jalapeno peppers (if you can't get it all that is OK).
  • Remove the stem and seeds and place them in a food processor with the steamed cauliflower, garlic, tahini, lime juice, chile powder, salt, and cilantro.
  • As you run the processor, drizzle the olive oil in from the top until the hummus reaches your desired consistency.
  • Taste and add more salt if needed.
  • Add more oil if a thinner consistency is desired.
  • Spoon the hummus into a bowl and sprinkle with chili powder and cilantro leaves for presentation if desired.
