Ingredients

  • 6 strips bacon chopped
  • 2 stalks celery chopped
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 lb small to medium turnips peeled and cubed
  • 2 8-ounce bottles of clam juice
  • 1/4 tsp white pepper I use up to 1/2 teaspoon
  • 1/4 tsp ground thyme
  • pink salt
  • 2 cups heavy cream divided
  • 1/2 to 1 tsp xanthan gum
  • 2 6-1/2 ounce cans chopped clams undrained
  • Fresh flat-leaf parsley

Instructions

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels to drain; set aside.
  • Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer.
  • Add the turnips, clam juice, white pepper, thyme, and salt. Bring to a boil then reduce the heat; simmer, uncovered, until turnips are tender, 15-20 minutes.
  • Stir in the heavy cream.
  • Once the soup is hot again sprinkle 1/2 teaspoon of xanthan gum over the soup and whisk or stir until it begins to thicken. If you like a thicker soup use the remaining 1/2 teaspoon.
  • Stir in the clams with the juice from the cans and heat through (do not boil).
  • Taste and add more white pepper and salt if needed.
  • Ladle the soup into bowls and sprinkle the cooked bacon and chopped parsley over each serving.
