- 1/4 tsp white pepper I use up to 1/2 teaspoon
- 1/4 tsp ground thyme
- pink salt
- 2 cups heavy cream divided
- 1/2 to 1 tsp xanthan gum
- 2 6-1/2 ounce cans chopped clams undrained
- Fresh flat-leaf parsley
Instructions
- In a Dutch oven, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels to drain; set aside.
- Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer.
- Add the turnips, clam juice, white pepper, thyme, and salt. Bring to a boil then reduce the heat; simmer, uncovered, until turnips are tender, 15-20 minutes.
- Stir in the heavy cream.
- Once the soup is hot again sprinkle 1/2 teaspoon of xanthan gum over the soup and whisk or stir until it begins to thicken. If you like a thicker soup use the remaining 1/2 teaspoon.
- Stir in the clams with the juice from the cans and heat through (do not boil).
- Taste and add more white pepper and salt if needed.
- Ladle the soup into bowls and sprinkle the cooked bacon and chopped parsley over each serving.
